Holiday Apricot Popcorn Balls
•forYoUandYourKids;'):,' ," : Fast Eddie's FasMHsappearing Apricot Popcorn Balls (Cook's Note: you will need a candy thermometer for this recipe) • 3'/2-ounce bag microwave popcorn popcorn • 2 cups chopped dried apricots • 1 cup quick-cooking (not instant) oatmeal flakes • 1 cup brown sugar • 1 stick (8 tablespoons) unsalted butter or margarine • l k cup light corn syrup Butter a large roasting pan or bowl. Pop corn according to package directions. You should have about 10 cups. Pour popcorn into prepared pan. Stir in apricots and oatmeal. In a 2-quart saucepan over medium heat, combine brown sugar, butter and corn syrup, stirring constantly. Continue cooking and stirring until the mixture reaches 290 F on a candy thermometer. Pour mixture over the popcorn and stir until the popcorn is evenly coated. When the mixture is cool enough to handle, form it into balls. Cool completely and store in an airtight container. Makes 24 3- inch balls.
