MINCEMEAT UPSIDE DOWN CAKE i cups ready-touse Mincemeat I box cake mix OR 1 recipe 2-egg cake Spread mincemeat in bottom of well-greased 9x9x2-inch baking dish. Prepare cake mix according to your own method or directions on box. Pour over mincemeat. Bake in moderate oven (350° F.) 55 to 60 minutes or until done. Remove from pan immediately. Serve warm with hard sauce or cold with whipped cream. Makes 9 servings. PRALINE QUICK-COOKIES These are a surprise with the flavor of Old New Orleans and so easy it's hard to believe they could be so good! % cup (half stick) butter or margarine V* cup finely chopped California walnut* W cup brown sugar 24 graAam crackers Melt butter and sugar together over water. Add walnuts. When well blended, spread mixture lightly on graham crackers. For an easy uniform method, hold cracker over double boiler and use rubber or plastic scraper for spreading. Place closely together on cooky sheet and bake 8 minutes in moderate 350° oven. Cut while hot into dozens of little cookies. SOUP-KETTLE SUPPER (Using canned vegetables) cups (ISMt ounces) canned french-ttyle green beans, drained 3 cup* (16-ounces) canned tomatoet 1 to 2 teaspoons salt 46 teaspoon pepper 1 tablespoon finely chopped parsley 8 strips (te pound) bacon 1 •cup diced cooked ham or beef IVi cups (lOWt-ounce can) condensed beef broth 2 cups water IVs cups packaged precooked rice J% cup* (17 ounces) canned sweet whole kernel corn Fry bacon in large heavy saucepan until crisp. Remove all but about 2 tablespoons of the drippings. Crumble bacon. Add ham. Saute until slightly browned. Add remaining ingredients except parsley. Bring to a boil. Cover, remove from heat, and let stand 5 minutes. Add parsley just before serving. (If chowder becomes too thick, add a little water.) About 1 hour before serving, combine mayonnaise, pickle, onion, and pepper in a bowl. Stir in the shrimp, avocado, and peas. Then add the rice and mix lightly with a fork. Chill.
