Individual Meat Loaves (Serves 4) One and one-half cups ground cooked beef, cup cooked oatmeal, 1 egg, beaten, onion, chopped, 2 tablespoons diced celery, cup catsup, salt and pepper. Mix all ingredients, and place in greased muffin pans. Bake in moderate oven (350 degrees about half an hour or until crusted and brown. Serve with mushroom eoup. This version of Swedish meat balls is economical and very good eating in the bargain.

Swedish Meat Balls (Serves 6) Three-quarter pound ground chuck beef, cup fine dried bread crumbs, lA cup minced onion, 4 teaspoon cornstarch, dash of allspice, 1 egg, slightly beaten, cup milk, VA teaspoon salt, Hi cup fat, 3 tablespoons flour, 3 cups water, 3 bouillon cubes, teaspoon pepper. In a mixing bowl combine the first 7 ingredients and teaspoon salt. Shape into 30 or 32 small balls, using a rounded teaspoonful of mixture for each. Brown the balls, hot tco many at a time, in the heated fat in a skillet; transfer to a plate to keep warm as they are browned. Then prepare the sauce as follows: Blend flour with fat remaining in skillet.

Stir in water, bouillon cubes, the remaining teaspoon salt, and pepper. Cook, while stirring, until smooth. Arrange meat balls in sauce; cover, and simmer 30 minutes.
