14 A CI Herald-Zeitung Sunday, March 17,1996 Wolfgang's opens with new spirit Jhe word is out about a treasured New Braunfels restaurant. Wolfgang's Keller, a New Braunfels favorite for many years, has re-emerged as Wolfgang's Restaurant Bar under the savvy artistry of Lynn and Don Forres. The Forreses are the dynamos behind the highly successful Huisache Grill, and their latest downtown venture beneath the historic Prince Solms Inn promises an equally pleasing, yet distinctly different, culinary experience. The Forreses were thrilled when the opportunity arose for them to take over Wolfgang's. "We have always been sentimental about this building, and just felt we could not pass it up," said Lynn, although the speed with which they needed to become operation took them aback.

"We expected to have six weeks to hire staff, develop menus and freshen the atmosphere but it ended up we had only six days! So we went into overdrive to make the primary changes. We plan to further expand the menu to provide more choices, including some lighter fare." She said support from their patrons, as with the Huisache, has been overwhelming. "We were totally unprepared for the immediate response, and our customers have been so patient, so well-wishing. We are very grateful for their trust and enthusiasm." Wolfgang's patrons have much to be enthused about. Lynn's background in the culinary arts is considerable, spanning 25 years.

Much of that time was spent at the famous Crystal Palace in Aspen, working under master Eugene Barabie; there she developed an individual style of inventive fine cuisine, and eventually brought that training to the well-known Ichabod's network in Dallas and San Antonio. She has also worked with the San Texas retail group, consulting on operations, developing menu concepts, designing kitchens and managing a restaurant that served 600 meals daily, with a staff or 45. "All of her training has come together to make this project a natural for her," Don said. The restaurant's new persona, which premiered a few weeks ago, features a spirited menu and relaxed approach to fine dining. The dining room has a lighter look, still keeping its historic character, and the menu has been completely revamped to include traditional entrees with a contemporary twist.

Guests can rest assured that a quick peck in the kitchen will always reveal a smiling and vigilant Lynn, Don or Susan (Kuehler, their assistant manager). "Our emphasis, as always, is on the freshest ingredients presented with the utmost of consideration," Lynn said. "We also lowered the prices considerably, so people can enjoy Wolfgang's more often," Don said. Don and Lynn, who are well known for their unique version and diversity of projects, are full of ideas to expand the Wolfgang's concept. "We have great plans for the patio, and the setting of the Prince Solms is perfect for the relaxed yet refined atmosphere we have in mind." Already they have added an element for late-night relaxation guests are welcome to come in just for drinks, desserts, or even light snacks in the bar.

They have also begun working with private parries and special events, particularly luncheons. "We are planning lots of new and interesting things beer-tastings, vintner's dinners, and more. We have some very interesting beers and wines available at Wolfgang's." In the near future, Don and Lynn hope to reopen the patio, beginning with afternoon and evening drinks (the outside fireplace is operational) and then expanding for lunch this summer. Don and Lynn said they have received a lot of inquiries as to whether they will continue with Huisache now that they have Wolfgang's. "Our answer to that is a hug, resounding, YES!" said Lynn.

Not only will they continue to own and manage the Huisache, but Don is also working diligently on developing the former Lux building on West San Antonio, just in front of the Huisache. "We're really excited about the possibilities there. We're planning retail and another restaurant for the main floor, and residential lofts upstairs. It's a great project," Don said. "The restaurant will be called Bel- lenhausen, and will be more of a European coffee house and bistro." Meanwhile, they are continuing to develop Wolfgang's.

Don said he and Lynn have been coming to the restaurant for 15 years, and want others to discover the magic of the Prince Solms just as they did. Wolfgang's Restaurant and Bar is open Tuesday through Saturday for dinner from 5 p.m. While they do accept reservations, they are not required except for larger groups. Kraft Mobiletel sweeps top awards Wireless Services held its quarterly meeting in San Antonio at Pappadeaux Tuesday night, Feb. 5.

In attendance were all of the Wireless Services authorized dealers in the entire San Antonio market. Account executives from Kraft Mobiletel, your local authorized Wireless Services Dealer, were awarded top honors and recognized as top performers. In the Seguin location account executive Debbie Ewald was awarded third top performer for the month of February. Debbie has been employed with Kraft Mobiletel since Dec. 1995.

All of the account executives at the New Braunfels location were honored. Susan Walker was awarded third top sales performer for the month of January. Susan has been an employee of Kraft Mobiletel for over three years. Lisa Whitehouse was awarded top sales performer for the months of January and February. Lisa has been employed with Kraft Mobiletel since Feb.

1995. Marcie Granzln was awarded second top sales performer for the month of February. Marcie has been an employee with Kraft Mobiletel since April 1994. The most prestigious awards of the evening given by Wireless Services honored the 1995 top three sales performers in the San Antonio market. The top two awards went to Kraft Mobiletel Account Executives Lisa Whitehouse and Marcie Granzin.
