4 THOY DAILY NEWS riday October 12 1973 Millers turn wheat in to marketable flour I Mr The rising cost of an American staple NOTE: A soaring worldwide demand' for wheat is reflected the price of bread on the supermarket shelf Today in the second of a three part series the Troy Daily News traces what happens to the valuable grain between field and flour By ANN WILLIAMSON Troy News Staff Writer In finished product The soft red winter wheat grown in Miami County and the rest of Ohio is not the type of wheat used in the making of bread It is the hard red winter wheat grown in the Plains states that is used in bread production Local wheat is milled into flour for baking cookies cakes crackers etc The protein rich hard red winter wheat is more suitable for bread It does not dry out so quickly as does the soft variety This explains why a cake dries out more quickly than a loaf of bread Durum is still another type of wheat grown in the northwestern states and used to make spaghetti noodles and macaroni i After the wheat has been bought by local elevators it is in turn sold to millers Although the types and varieties of wheat may differ the milling process for all varieties is the same In earlier times almost every community had a flour mill But with industrialization most of the small mills have disappeared giving way to a few huge grinding plants However there is one small mill still thriving in this area Nagel and Son Mills located in Pyrmont three miles southwest of Brookville The mill grinds out a high quality pastry flour which it sells to individuals as well as large bakeries Harry Thrush the manager of Nagel Mills buys wheat from various local graineries such as in Tipp City for 10 to 15 cents above the price paid by the elevator to the farmer now paying anything from $480 to $510 for a bushel of said Thrush The finished pastry flour is now sold for $13 per 100 lbs and $675 for a 50 lb bag A month ago a 100 lb bag sold for $10 and in mid August the same bag being installed in mills around the world to replace the old screw conveyor and bucket elevator systems Upon entering the system wheat is run through grinders The next major step introduces the broken particles of wheat and bran into a huge boxlike sifter where they are shaken through a series of cloths" or screens to separate the larger from the smaller particles Pneumatic systems are also completely sealed and self cleaning which makes it easier to keep a mill spotless and dust free Dust is one of the greatest hazards in milling A single spark in a flour laden atmosphere will produce an explosion The smaller particles of endosperm reach the bottom of the sifter Here they are graded by size and carried to separate purifiers In a purifier a controlled flow of air lifts off bran particles while bolting cloth separates and grades coarser fractions by size and quality The outside of the kernel is called the bran The lining between the bran and the white endosperm (flour) is called the middling Small amounts of the bran and middlings are used in breakfast cereals Most of it however is used in the feed for stock It is at the end of the milling process that the flour is bleached and enriched An enrichment formula would include a combination of thiamine niacin riboflavin and iron Mills in the Great Plain states then send the flour to bread bakeries across the country After the flqur has been through the various stages of grinding the Pyrmont mill sells it to the Keebler Baking Co in Cincinnati the Richmond Baking Co and Bluebird Bakeries in Dayton Many local families also buy their flour for home use here It is interesting to note here that grocery stores have recorded a declining family trade in flour during past years This reflects a decline in home
