Muff ins Ingredients: ii cup butter or margarine, Ir3 cup sugar. 1 egg, 2 cups sifted self-rising take flour, 0112 9-our.ce can sweetened crushed pineapple. Method: Cream butter and sugar it large mixing bowl; add Cfg »nd beat for several minutes. Add flour and pineapple {including syrup, from can) and stir only enough to moisten dry ingredients. Fill 12 buttered muffin pans (one- third rup size) with batter; bake in hot (425F.) oven 20 minutes or until toothpick inserted in center, of. m u f f i n , comes out clean. Serve hot. Spaghetti And Meatballs Ingredients: 1 pound ground c h u c k beef, 1 cup buttered ~ ft bread crumbs, 1 tablespoon finely diced onion. 1'Xi teaspoons salt, 1-8 teaspoon pepper, 2 tablespoons butter or margarine, 2 garlic cloves (peeled and minced), 1 No! 2(4 can tomatoes (strained) one C-ounce can tomato paste, 1 beef bouillon cube, 1 bay leaf, 1 pound thin spaghetti (cooked arid drained). Method; Mix together beef, buttered bread crumbs, onion, '/£ teaspoon tail, and pepper. Shape into 12 to 18 balls. Melt butter in large sltilict and add garlic; add meat balls and brown slowly on all sides until cooked through. Remove meat from pan. Add strained tomatoes, tomato paste, bouillon cube, bay leaf, parsley and 1 teaspoon salt to drippings in pap. SiLimcr 50 to 60 minutes, stirring occasionally. Remove bay leaf. Add meat ball? and 'heat thoroughly. Se'vc over hot spaghetti. Makes 6 servings, . Special Green Salad Ingredients: 2 cup;; torn mixed salad greens, 2-3 cup sliced halved cucumber, 1-3 cup short strips Swiss cheese, 6 large olives. 2 10 d tablespoons French · dressing, salt and freshly-ground pepper _(to taste). Method: Grease individual heat- resistant glass 0-inch pie plate ivllh butter. Tut cream into pic plate; place tungueslrips over cream; break eggs over tongue; sprinkle eggs with grated Swiss cheese. Bake in slow (325F.) oven until eggs are as firm as desired --15 to 2U minutes. Serve at once. Pass salt and pepper with 'egg! Peanut Butter Swirls Ingredients: 2-*cups sifted flour, 3 teaspoons baking powder, 1 ICE spoon salt, '/. cup shortening \ cup milk, \'-i cup chunk-stile pea- I nut butter, 2 tablespoons butter or margarine, 2 tablespoons sugar. Turn out on pastry cloth, lightly floured board, or waxed paper; knead lightly about ',·! minute.
