Freezing foods at home is i comparatively new method of food preservation. It is another easy, economical wayto hav» slimmer freshness all year long. Lite other methods of home food preservation, there are a few fundamentals to keep in mind if the foods are to keep well and taste good. The bacteria In food are not killed by freezing but are kept inactive at Zero Degrees Faren- heit. That is ttie reason foods should be stored at that temperature. Some quality is lost if the temperature rises even five degrees. All frozen foods have a "storage life" and few are at peak quality and flavor longer than six to twelve months. While freezing .foods is the simplest method and the least time-consuming of all home preservation methods, it can be more expensive; and all foods will not freeze satisfactorily. Foods such as asparagus, green beans, lima beans, green peas, corn and berries are excellent products to freeze. However, any vegetable or fruit which is best eaten raw is not recommended for freezing. Pears and tomatoes are good examples 'of these foods. Prompt freezing is necessary after the food is packaged in air-tight containers. Freezing in a home freezer can be satisfactory; however, do not try to put in too much at one tima and overload the freezing capacity. Foods should freeze in 24 hours. foods to be frozen should be top quality, just at the stage when they are best when eaten. fresh. Fruit should be firm and well-ripened. Vegetables should be garden fresh and tender. Overmature vegetables tend to be tough. Remember, freezing just prevents spoilage and maintains whatever quality was present in the fresh product.
