Each HOME CANNING... As the fresh fruits and wgeto- bles from local ami homegrown supplies become «ora plentiful, many of you an thinking of "ptfHng op" son* of these foods at home. There are two basic home food pres- ewation methods - canning and freezing. Bher can be fun, is easy, anil can save you money. Here are a few fundamentals to remember when doing home canning. Of course, the first step should always be the selection of the freshest, best-quality foods. The end product cannot be satisfactory if you do not use fruits aid vegetables in prime condition and at the peak of flavor. Select foods free from blemishes, decay and moid. Be sure to wash the fruits and vegetables thoroughly, but do. not allow them to stand in water for long periods ol time. Some important vitamins an soluble m water. The processing equipment .used will depend on the type of food to be canned. Acidic foods, such as fruits, tomatoes, peppers, or foods to which vinegar has been added, can be processed in a boiling water bath. Other pieces of equipment which make the operation easier include smail vegetable brushes; a jar funnel; large washing pans; long- handled spoons; forks and tongs; and measuring cups and spoons. There are many helpful instructional booklets and recipes available from your county extension office; from the manufacturers of canning equipment and supplies; from tti e public library; and from my office.
