Crudup Star Route No. 4 Elkins, Ark. 72727 Yz cup shortening 1 cup sugar 1 cup mashed rutabaga 2 eggs 2V4 cups all purpose flour V, tsp. salt 2 tsp. baking powder Yt tsp. soda Yx tsp. cinnamon Y* tsp. nutmeg Yi bsp. cloves Yi cup milk Yt cup chopped nuts Cream shortening, add sugar gradually and cream well. Add eggs, beating well, add rutabaga .and mix well. Sift flour, salt, soda, baking powder and spices together. Add alternately with milk to the creamed mixture, beginning and ending with dry ingredients. Add nuts and mix well. Bake in bundt pan at 350 degrees for 70-75 min. Let cake cool in mold for 10 minutes on cake rack; then loosen edges with tip of knife. Invert to unmold. Drizzle with lemon butter glaze as follows: Lemon Butter Glaze 1 egg yolk 2 tbsp. butter lYi cups powdered sugar 3 tbsp, lemon juice 1 tsp. grated iemon rind Dash of salt Beat everything together. Drizzle over slightly warm cake. CHOCOLATE POUND CAKE Mrs. Loretta Kelley Rt. No. 1, Box 204A Winslow, Ark. 72959 % Ib. butter V'z cup shortening 3 cups sugar 5 eggs 3 cups flour Y2 tsp. baking powder Vi tsp. salt 4 tbsp. cocoa 1 tbsp. vanilla flavoring 1 cup milk Cream together the butter and shortening. Add sugar and eggs. Sift dry ingredients together. Add alternately with milk and flavoring to creamed mixture. Bake in a 9 or 10 inch tube pan at 325 degrees for about 1% hours hours. APPLE CAKE Barbara Chester Rt. 7 Fayetteville, Ark. 4 c. apples 2 c. sugar 2 c flour 3 c. oil 1 c. nuts (optional) 2 tsp. cinnamon 1 tsp. soda pinch of salt 2 eggs 2 tsp. vanilla Mix together with spoon Cook 1 hour. 250 degrees. 1 Frosling c. buttermilk 2 c. powdered sugar » stick butler 1 tsp. soda Mix and boil 5 minutes. Pour on cooled cake. AMISH VANILLA PIE Dolores Craun Star Rt. 4 Elkins. Ark. V4 cup brown sugar 1 tbsp. flour Yt cup corn syrup Hi teaspoons vanilla 1 egg (beaten) 1 cup water Topping 1 cup flour Yi cup brown sugar Yi teaspoon cream of tarter Y* teaspoon baking soda Ye teaspoon salt Y* cup oleo or butter 1 (9 in.) unbaked pie shell Combine first five ingredients in 2 qt. saucepan. Slowly sjir in water. Cook over medium heat, stirring, until mixture comes to a boil. Cool. Combine t o p p i n g ingredients until crumbly. Pour cool mixture into pie shell. Top with crumbs. Bake at 350 degrees for 35-40 minutes or until golden brown. CHOCOLATE MARSHMALLOW COOKIES Mrs. Karen Plumlee 1004 Bel Air Drive Faye'.k-v'M?. Ark. 1% cups sifted cake flour Yi teaspoon soda MJ teaspoon salt Vi cup cocoa M; cup shortening 1 cup sugar 1 egg % cup milk Y* cup chopped pecans 1 teaspoon vanilla 36 marshmallows -- cut in half pecan halves Sift flour, measure, sift again with soda, salt and cocoa. Cream shortening. Add sugar gradually, blending thoroughly. Add egg. beat well. Add flour mixture and milk alternately, beating after each addition. Add chopped nuts and vanilla and mix. Drop mixture by level teaspoons about two inches apart onto well greased cookie sheet. Cookies will spread. Bake in moderate 350 degrees oven for eight minutes. Top with marshmallow halves, cut side down. Return to oven and bake two minutes, until marshnallows soften. Cool. Frost with cocoa frosting. Top each cookie with pecan half. Makes 6 dozen. Frosting Sift two cups sifted powdatsd sugar with three tablespoons cocoa. Add five tablespoons light cream and % teaspoon vanilla. Beat until smooth and creamy. Spread on cookies. CHERRY-PINEAPPLE CRISP Susan Jones 334 North College Fayetteville. Ark. 1 stick hard margarine 1 can (15 oz.) cherry pie filling 1 prepared cake mix i 15-oz. can crushed pineapple Mix cherry pie filling and crushed pineapple in bowl Pour into 9 in. square cake pan. Spread cake mix over mixture. Melt margarine in saucepan over low heat. Pour over the mixture in pan. Bake at 350 degree oven until crust is golden brown. Nobody makes Mall: Liquor like Schlitz. Nobody! Excellent for Cooking Tool BLACKBERRY JAM CAKE Aleta J. Wilson Route 7 Fayetteville, Ark. 1 cup butter 2 cups sugar 6 eggs 3 cups flour 1 teaspoon soda 3 teaspoon each cinnamon, allspice, and cloves 2 cups jam 1 cup buttermilk Cream butter and sugar; add eggs, one at a time, Beating until no egg is seen. Stir in dry ingredients. Add jam £fcd buttermilk. Pour into 3 oiled and floured layer cake pans or one 13 x 9 x 2-inch cake pan. Bake at 350 degrees until done. Butter Icing 1 stick butter 4 cups confectioners' sugar 2 egg yolks 1 teasooon vanilla 4 tablespoon cream Mix together and frost cooled cake. ANGEL FOOD DELIGHT Mrs. Fred T. Robinson in 1817 S. Custer Lane Fayetleville, Ark. 1 angel food cake, sliced Into three layers 1 8oz. pkg. Philadelphia cream cheese 1 pkg. Dream Whip 1 can blueberry or cherry pie filling Yz cup granulated sugar Yt cup powdered sugar 2 teaspoons vanilla Cream Philadelphia cream cheese, add V4 cup granulated sugar, and 2 teaspoons vanilla. In separate bowl prepare Dream Whip as directed on package. Add H cup powdered sugar. Stir cheese mixture and Dream Whip mixture together. Use to ice layers and top of cake. Refrigerate until cold (over night). When ready to serve, top with chilled pie filling. A delicious "summer-time" dessert.
