COURIER NEWS PAGE rnlKTEEK This Shrimp Surprised a Surprise Party By GAVNOR MADDOX NEA Food and Markets Editor Ben Lucien Burman is an expert on shrimp cookery, as well as a best - seller novelist, author of "Steamboat Bound the Bend" and '•pour Lives of Mundy Tolliver." At a dinner in honor of him and his wife in New York, a friend surprised the party with this new and remarkable shrimp recipe. It was called Shrimp Tolliver, after Mundy Tolliver,'a character in one of Burman's novels. Shrimp Tolliver starts with little shrimp that have sat for a couple of hours in a marinade of blended olive oil and lemon juice. The marinade is saved in a bowl while the shrimp are sauteed in 'butter or margarine, along with garlic, until they're a dusky pink. Then, with garlic removed, the shrimp go onto a hot platter while chopped'almonds simmer in butter or margarine, along with marinade, a couple of dashes of Tabasco sauce and, as a crowning to oahu, restrained lacing of dry vermouth or lemon juice. For a pound of little shrimp, use a half cup (or enough barely to cover) of the lemon and oil marinade, a half cup of the chopped, blanched almonds; 2 tablespoons of vermouth or a little fresh lemon juice. Four the simmering sauce over the hot platter of shrimp. Serve with shrimpboat rice (add a generous pinch of saffron and a sprinkling of finely chopped , chives or spring onion tops to the rice when it's almost done, stir with a fork, and let it steam). For a special buffet party, serve "Shrimp Tolliver" with a large bowl of spring salad containing many different greens, wedges of tomatoes and chunks of avocado, all with . a French dressing. Of course, hot garlic bread belongs in this festive picture. This Casserole Will Please Whole Family Does your family like casseroles? This one will please all members of the family. Ingredients: 2 tablespoons fat, fe csup finely diced onion, Vfe pound chopped beef, I teaspoon salt, V 8 teaspoon pepper, y a teaspoon thyme, 1 teaspoon minced parsley, one 11-ounce can condensed tomato soup, one 3-ounce can chopped broiled mushrooms, & pound spaghetti (cooked), 1 cup grated process American cheese. Method: Melt fat in saucepan •over moderate heat. Add onion and let cook about 3 minutes, stirring often. Add beef, pulled into small portions. Continue cooking, stirring often, until lightly browned. Add salt, pepper, thyme, parsley, tomato soup and broiled mushrooms (including liquid in mushroom can). Bring to boil. Drain cooked spaghetti. Combine with meat sauce. Place in shallow lightly oilea 1-quart baking dish. Sprinkle cheese over the top. Place under moderate heat ia preheated broiling compartment until cheese is lightly browned.
