COURIER NEWS PAGE NINi USDA Vegetable Booklet Handy Cooking Experts Give Hints OH Use Of Garden Foods By CAVNOR MADDOX NEA Food and Markets Editor "Root vegetables" is the title of a new pamphlet prepared by the U. S. Department of Agriculture cookery experts in Washington. It gives the newest practical advice on getting the most flavor and food value out of beets, carrots onions, parsnips, rutabagas and turnips. These two recipes for onions will bring more pleasure to your fami' ly meals. Stuffed Onionj (4 aervlngl) Four large onions, 1% table- ipoons chopped parsley, one-third cup chopped celery, 2 tablespoons butter or margarine, 1 and one- third cup fine dry bread crumbs, 1,4 teaspoon salt, pepper. Peel onions and. cut In half crosswise. Simmer In salted water until almost tender. Drain. Remove centers of onions without disturbing the outer two layers. Chop centers fine. • Cook parsley, celery, and chopped onion In the butter or margarine until slightly softened. Add crumbs and seasonings, and heat thoroughly. Stuff onion shells with hot mixture. Place In a baking pan; add water to cover the bottom of the pan. Cover the pan. Bake at 350 degrees P. (moderate oven) about *> minutes or until onions are ten' der. Brown under the broiler after baking If desired. Stewed Onlnna and Tomatoes (4 aervtngs) Hiree-fourths cup sliced onions, V/i cups cooked, canned, or chopped fresh tomatoes, 14 teaspoon salt, pepper,. If desired, 1 tablespoon flour, or 2 slices dry bread, cubed, 1 tablespoon butter or margarine. Cook tomatoes and onions with salt and pepper slowly until the onions are tender. Mix flour and a little of the hot tomato juice, then pour the mixture Into the tomatoes and cook until thick. Or add bread cubes to ths tomato mixture and heat. Add butter or margarine. Well, we had a difference of. opinion over how certain scenes should be played. He wanted certain cuts to be made, and Herman Wouk, who wrote the book and the play, wasn't available for a week or so. .Herman Is a very devout Jew and wouldn't work during the holidays. "Henry got worried. He wanted certain comedy scenes to come out. He didn't give his curtain speech with the force I thought it required. Hamburger Casserole: Beef and Noodles Make Main Dish Here's a new way to UM hamburger in a casserole dish. BEEF AND NOODLE CASSEROLE Incredienta: 1 tablespoon ult, S quarts boiling water, t ounces (about 4 cups) medium egg noodlec, 2 tablespoons butter or margarine. H cup chopped onion, 1 pound ground chuck beef, 2 tablespoons chill sauce, 1 teaspoon Worcestershire sauce, 1 tablespoon joy sauce. 1 teaspoon garlic salt, l cup soft bread crumbs, \ cup milk (scalded), 1 egg (well beaten). K cup grated Cheddar cheese. Method: Add 1 tablespoon salt to rapidly boiling water. Gradually add noodles so water continues to boll. Cook uncovered, stirring occasionally, until tender. Drain in colander. Melt butter in skillet; add onion and beef; stir and cook until beef is browned. Add chili sauce, Worcestershire, soy sauce, garlic, salt and bread crumbs; mix well. Add milk and egg; mix lightly but thoroughly. Turn into greased Ui-quart casserole and sprinkle with cheese. Bake in moderate (3JOF) oven minutes- Make: 6 servings. Wild Duck Best 'A la'Frisco' West Coast Recipe Comts from Hotel Cliff's Redwood Room By GATNOR MADDOX NEA Food and Markets Editor There's probably someone in your family planning to go wild- duck hunting. The season is open. W« asked Knud Neilsen, head chef of the Redwood Room at the Clift Hotel in San Francisco to give us his recipe for roast duck. It Is unusual, but easy to do. Wild Duck (Use J or 3-pound bird) One quarter teaspoon thyme, 1 teaspoon salt, 1 teaspoon pepper, 2 apples, sliced, ! / 4 cup chopped celery, 4 small white onions. For basting sauce: one teaspoon butter, 1 tablespoon Worcestershire sauce, 1 jigger brandy (if desired), '/« cup of the duck's blood. Rub inside and outside of duck with salt, pepper, thyme. Place apple, celery, onions in breast. Roast in moderate oven (375 degrees F.) for 15 minutes (rare), 18-20 minutes (medium), 25 minutes (well done). Remove from oven. Cut breast and place in chafing dish with bul- ter, Worcestershire sauce. Simmer 15 seconds. Pour brandy and blood over the wild rice, currant jelly, French string beans and for dessert serve French pancakes with stewed fresh or frozen strawberries. Chinese Pork Chops Sweet And Pungent If you like »weet-and-pungcnt pork, cooked the Chinese way, you will so for this recipe. WEST COAST PORK CHOPS Ingredients: 4 loin pork chops ("1 to 1 inch thick), ?! cup honey, V4 cup cider vinegar, ',» cup soy sauce, 1 clove garlic (peeled and minced), '/a teaspoon monosodium giuta- mate. Method: Trim fat from 'chops; place in shallow dish. Mix honey, vinegar, soy sauce, garlic and monosodium glutamate; pour over chops about 4 hours before cooking. Cover; refrigerate; turn chop several times in sauce. When ready to cook, remove chops from sauce; pat dry with paper towel. Grease heavy skillet with bit of pork fat and heat; brown chops slowly on both sides. Transfer chops to baking dish Just big enough to hold them in one layer. Heat marinade to boiling in skillet; pour over chops. Bake uncovered, ba'sting often, In moderate (350F) oven until chops are tender—about 1 hour. Serve with pan sauce. Makes 4 servings.
