EGG SAUCE ON SPRING MAC 1 pound Vimco Spring Mac i cup diced celery 2 tablespoons chopped parsley 2 tablespoons finely chopped onion 1 can (8 oz.) mushrooms, drained Vi CUP margarine 2 tablespoons flour l'j cups milk Vi pound (IV2 cups) sharp cheese, grated Vi teaspoon salt 4 tablespoons Worcestershire sauce 5 hard cooked eggs Vi cup grated Parmesan cheese Cook Vimco Spring Mac for 13 minutes in boiling salted water. In large skillet, cook celery, parsley, onion and mushrooms in margarine until onion is transparent.

Add flour and blend ell. Add milk all at one time. Cook over medium heat until thickened. Blend in grated cheese, salt, Worcestershire sauce. Add chopped hard-cooked eggs, reserving 5 center slices for garnish.

Serve over hot Spring Mac. Sprinkle with Parmesan cheese. Serves 4 to 6. 5 Album Reviews Bob Dylan: "Desire" This is the best Dylan album in years. The' production is better than one expects from Dylan LPs as is the instrumentation.

But, more importantly, Dylan's tunes are as powerful as his early, trend-setting material. His singing is stronger than on several preceding albums and brims with feeling. Included are tunes dedicated to Dylan folk heroes Hurricane Carter and the late gangster. Joey Gallo. "Sara," a tune he wrote for his wife, is one of Dylan's best ballads to date.

Earth, Wind and Fire: "Gratitude" (Columbia). It's no wonder that this two-record set zoomed to the top the nation's Top 100 chart. It features a variety of superb rhythm and blues material with plenty of jazz overtones. The group's lyrics may not be the most innovative but they all fit perfectly into the patchwork of funk the group weaves. The musicianship of the grpup cannot be beat nor can the feeling that this group my favorite in the and idiom puts out.

Part of the LP was cut live and part in the studio. Nilsson: "Sandman" (RCAK Harry Nilsson misses again with his latest effort to win back some of the fans that have deserted him in recent years. The LP contains no impressive and Nilsson's singing is uninspired and monotonous. But he gets $500,000 for each album he puts out under his long-term RCA contract, so what does he care? Elvis Presley: "A Legendary Performer, Part Two" RCA). Strictly for Elvis devotees.

Album contains some, reissued Presley material and also some tunes that never were released, including one recorded in J954 "Harbor Lights." The LP features an interesting Elvis interview (when he was 21 he sounds-like the biggest hick in the world, incidentally) and also a booklet filled with Presley clippings. Among the recycled tunes on the album are "How Great Thou Art," "If I "IOSS NIGGER" (PGIf- wmioimon "FOXY Prior (PG) Can Dream," "I Want You, Need You, Love You" and "Blue Christmas." How's that for a cross section? "Best of Gladys Knight and the Pips" (Buddha). Contains 10 previously released tunes by this popular group. Among them: "Midnight Train to Georgia," "On and On," "I've Got to Use My imagination," and the medley of "Try to 'Remember" and 'The Way We Were." Janis Ian: "Aftertohes" (Columbia). Miss Ian's style is getting slicker but her lyrics still are as biting as ever.

1 She is more a poet than a singer and one of the best on the contemporary scene. And this album is going to enhance- her reputation even more, since it is not only a good vehicle for her poetry but also for her hypnotic singing style. George Baker Selection: "Paloma Blanca" (Warner This album seems to have been rushed out to cash in on the popularity of the single "Paloma Blanca," a left-handed hit that quickly grabbed the ears of the nation. Unfortunately, not one of the other tunes on the LP comes close to the sound of the title track. Over-all, the album is a disappointment' "The Best of.Jethro Tull" (Columbia).

Contains a fine cross-section of the hits of a group that is a favorite among Pittsburgh rock fans. Included are "Aqualung," "Thick as a Brick," "Living in the Past" and "Bungle in the Jungle." Grand Funk: "Born' to Die" (EMI). This group's "only claim to fame used to be that it was the loudest rock act in the world. However, the group has slowly developed into a fine unit that has won over not just teenyboppers but also serious rock fans. The new album reflects a mature Grand Funk sound.

It contains mostly softer rock tunes. The group some fine harmonies and members' musicianship also stands out on this well-produced LP.
