WATER PH. 5319 Daily Menu Recipe Plain Food After Fancy Eating Spareribs and Kraut French or German Style By Gaynor Maddox After the fancy eating of the holiday season, a good meal of spareribs and sauerkraut will taste awfully good. We cook ours in a stainless steel fryer with aluminum-clad bottom and tight fitting dome cover. This allows simmering over very low heat. Incidentally the cover keeps the kitchen free of heat and food odors.

Here are two versions, French and German. Take your choice and enjoy a wonderful meal. Spareribs With Sauerkraut (Serves 4-6) 3 pounds spareribs, cut in serving pieces, 2 tablespoons fat, if necessary; 2 pounds (1 quart) sauerkraut (or 1 No. can), cup apple juice, cup tomato juice, 2 medium apples, peeled, cored and shredded; Chopped parsley French Style 2 tablespoons celery seeds, 2 tablespoons seedless raisins, teaspoon sugar. German Style 2 tablespoons seeds, teaspoon ground black pepper, teaspoon paprika.

In preheated fry pan saute spareribs over medium heat until brown on both sides. Add fat only if ribs are lean. Blend sauerkraut with juices, apples and seasonings. Cover spareribs with kraut. Put dome cover on and simmer over low heat for hour.

Turn ribs, cover and simmer for another hour or until ribs are tender. ping. Serve with jacket potatoes. With the versatile dome cover, the large stainless steel fry pan has countless uses in the modern kitchen. Here's a suggestion for a quick supper; pan-fry precooked ham slice (about thick) in butter or fat over low heat, turning once.

Peel 1 large green banana, cut in half crosswise, and fry for 3 to 4 minutes until golden brown, adding more butter to pan if necessary.
