OOWOTR THURSDAY, JULY 8, Oven-Fried Chicken Is American Favorite By CECILY BROWNSTONE Associated Press Food Editor OVEN-FRY CHICKEN to a crisp golden brown, put some light and fluffy biscuits in the same pan 15 minutes "before the chicken is ready —and listen to compliments. Packaged mix coats the chicken j and makes the biscuits, so this is i an easy-to-do recipe. If you use •an attractive baking dish, you can bring the chicken and biscuit to the table in it. The food will be piping hot and you won't have serving dishes to wash. When we cooked this chicken and biscuit deal recently, our family voted for its inclusion in "the permanent file." For our first course on this dinner we had fresh vegetables with a dip, instead of salad. Radishes, cucumber slices, sprays of water cress and short strips of celery were arranged in a bowl; to accompany them my sister concocted an interesting dip. She thinned commercially-prepared mayonnaise with buttermilk and added a tiny bit of crushed garlic and. paprika. We all enjoyed dunking the vegetables in the dip. Even our 16-year- old nephew—who sometimes snubs salad—thought this appetizer was tops. With the''chicken and biscuit we served stewed tomatoes and steamed whole snap beaiis. Dessert was another favorite combination—vanilla ice cream with a fresh fruit sauce- OVEN-FRIED CHICKEN AND BISCUIT Ingredient*: 1 fresh or quick-frozen frying chicken (cut up), % cup garlic French dressing, 1 cup biscuit mix, 2 teaspoons salt, % teaspoon pepper, 2 teaspoons paprika, Vi cup shortening, Vi cup butter, 2 cups biscuit mix, 2/3 cup milk. Method: Place chicken in shallow pan; pour French dressing over. Turn to coat each piece. Allow to stand at least 30 minutes; drain. Stir 1 cup biscuit mix, salt, pepper and paprika together; dip chicken pieces in this mixture to coat well. Melt shortening and butter in a shallow baking-dish (about 9 by 13 by 2 inches) in a hot (425F) oven. Remove baking dish from oven and place chicken skin side down, in a, single layer. Bake in hot (425F) oven until almost tender—about 45 minutes. Turn chick- en. Meanwhile stir together 2 cups biscuit mix and milk with fork. Turn out—it will be soft—on floured pastry cloth or board; knead a few times to shape into a, ball. Roll out J ,2-inch thick and cut out 8 biscuits. (Shape raggedy end* of biscuit dough together and cut into 4 pieces.), Move chicken over so it occupies about three-quarters of pan and place 8 round biscuits at end of pan; make sure both chicken and' biscuits remain in single layer. Continue to bake in hot (425F) oven another 15 minutes or until chicken is fully cooked and biscuits are lightly browned. (Raggedy ends of biscuit dough may be baked in another small pan at the same time with any bony back pieces of chicken if large baking dish is crowded.) Makes 4 servings. Read Courier News Classified Ads I Here's Recipe For Almond Mocha Cookies MOCHA ALMOND COOKIES Ingredients: 1 cup sifted flour, 2 teaspoons baking power, % teaspoons salt, 3 tablespoons cocoa Va cup unbalanched' almonds, 5 tablespoons shortening, 1 cup plus 2 tablespoons sugar, 2 eggs separated, % cup strong coffee, 1 teaspoon vanillaMethod: Sift together the flour, baking power, salt and cocoa. Put almonds through food chopper using medium knife. Cream shortening and % cup of the sugar. Beat egg whites until stiff; gradually beat yolfct until thick and color. Stir yolks almondi. coffee and vanilla into creamed mixture; stir in flour mixture. Fold in egg whites, blending only enough to give mottled appearance. Drop by teaspoon- fula onto lightly greased cookie iheet, about 3 inches apart. Bake in moderate (350F) oven until lightly browned around edges- about 15 minutes.
