Young MENU FOR TOMORROW BBIJUGE MJNQHEON Shrimp Salad Potato Cttips Pickles and Olives Hot Rolls Pineapple-Coconut Beverage FINKAPJP1K-COCONUT BARS INGREDIENTS: For the cup sugar, 3 tablespoons cornstarch, teaspoon salt, one can (buffet or flat) crushed pineapple (undrair.ed), 1 tablespoon lemon juice, 1 tablespoon butter or margarine. For the cup butter or margarine (soft), 1 cup firmly brown 1 cup sifted flour, teaspoon salt, cups shredded coconut.

METHOD: For the cup sugar, cornstarch. teaspoon salt, and pineapple in a. small saucepan; bring to a boil. Cook and stir constantly until thick and clear, about 5 minutes. Remove from heat and stir in lemon juice and 1 tablespoon butter.

For the cup butter and 1 cup brown sugar; add flour, teaspoon salt and coconut. Mix with fingers until crumblike. Press one-half of crumb mixture firmly into greased and floured 9-inch square baking pan. Spread pineapple filling evenly over surface. Cover with remaining crumbs: press top layer down firmly.

Bake in moderate oven 35 minutes or until golden brown. Place pan on wire cake rack to cool. Cut into 24 bars and remove with spatula.
