William M. Bright, who is stationed here at C h e n- nault Air Force base and who hails from Kentucky, "suh!". THE TRUE JULEP "The true j u 1 e p," declares Maj. Bright, "is a mixture of Bourbon, mint, and ice that is brewed with special care for two or three days by carefully chilling the Bourbon, ice, and the very necessary metallic cups or tumblers (preferably Sterling or aluminum, because of their heat conductivity)." Maj. Bright contends that it is practically impossible to get a true julep at a commercial bar because of the difficulties in the detailed preparations required. have the 'fixin's* available in the spring when 'Horse Fever' is beginning to take over and is climaxed by the Annual Run for the Roses, The Kentucky Derby, which is the first Saturday in ! May of each year." The following recipe has been in the Bright family for many generations and, according to the Major, was used by most of the "old-timers" such as Irvin S. Cobb, Marse' Henry Watterson, Samuel L. demons, Col. E. R. Bradley, and Louis Lee Haggin at the turn of the century: INGREDIENTS BOURBON — Some people say that Bourbon is Bourbon, but this is not so, says Maj. Bright. Some so-called Bourbons have grain neutral spirits added. Some are too young and some are too old bon is best, anywhere from 90 to 100 proof. MINT — There are two types of mint—the Spear Mint, which is the most pungent and has the rather long, thin, and sharp pointed leaf; and the Bib Mint which has a fatter leaf and is a bit longer than the Spear Mint. The true Spear Mint is the most desirable if it can be found. ICE — The ice must be completely clear before crushing as any chlorine or other spots will cause the resulting Julep to lose its true and distinctive taste. Maj. Bright recommends a source of clear spring water to freeze for the ice source. The ice should be crushed to a consistency of gravel and kept in a wooden container. THE BREW — The "brew" is one of the most important ingredients. It is concentrated spearmint flavoring and can be purchased at any pharmacy, but Maj. Bright prefers to make his own by the following directions: Take a double handful of mint and run it through a food chopper. Wash out the remnants with "grain" alcohol into a small pitcher. Place the ground mint in the pitcher also and cover with grain alcohol and mix thoroughly. Stir vigorously at least three times daily. (This operation should have been completed at least four days prior to the party.) The pitcher should be kept covered and placed in the refrigerator. The grain alcohol will soak out the mint oil and you will have a perfect "pre-mix" to flavor the Bourbon to taste when finally mixing the Julep several days later. Many years ago, the ingredients were placed in the ice houses in the "Julep Holes." These "Julep Holes" were made by stacking the ice in a square, covering with sawdust for insulation and adding rock salt to lower the temperature so that the resulting temperature in the Julep Hole would drop quite low, thus starting the "curing" process of the ingredients. HERE'S HOW1 THE GRAND MIXING—Place the silver cups, Bourbon, mint "brew," and ice in the dee p- freeze. It will be necessary to re- chip the ice many times so that you will have a bucket of ice gravel when you are ready to mix and serve. This should be done at least three days before the party. At periodic intervals during the three days, remove the cups from the freezer momentarily so that the moisture will begin to form on them and then replace them in the freezer. All mixing is done physically in the freezer. Take a cup in your gloved hand and fill the cup with ice from the bucket in the deep freeze, add a little brew to taste, and fill with Bourbon. Wrap with a heavy paper napkin for added insulation, insert two short straws, add a bouquet of mint on the top, and serve. (Maj. Bright recommends one Julep to a guest before dinner ,or two after, and reminds you I that this is a pretty strong concoction, because basically it is pure Bourbon.)
