< V I Chicken tasty in a mini-roll There's an old saying that good things come in small packages and you can prove it with the mini-roll. It's a brand new way with chicken . . . and the most exciting cooking technique we've heard of in ages. The mini- roll is a small, juicy unit of chicken derived from boning the thigh, stuffing and rolling. Since there's only one good'Size bone in the thigh section, the surgery involved is most minor. The thighs are a stnap to bone and yield a wonderfully juicy "cutlet" th$t may be stuffed hi a variety of ways, says the National Broiler Council, one of the most elegant is Mini-Rolls With Apricots. The boned thigh cutlets are filled with dried apricot halves, slivered almonds, and seasoning. You fold the sides over and fasten with small skewer. If you don't have the skewer handy, the rolls may be closed with the kind of small pins you use when stuffing a whole chicken. The mini-rolls are baked for 40 minutes and come to the table with a delectable sweet- tart sauce of sour cream, aprico jam and mustard. The dish is sensational . . . we promise. On a day when you aren't rushed, it's a great idea to purchase thighs in quantity, bone .them, and store these handy chicken cutlets in the freezer, ready for cooking. (The chicken will keep better if it is not stuffed before storing.) You can store in plastic bags or between layers of saran film, separating the units of cutlets into family sized servings. Figure on about two mini-rolls per adult serving. For a family meal that's a real treat or for a spectacular buffet, rely on mini-rolls. They're new, they're exciting . . . and they will enhance your reputation as the most creative cook in your neighborhood. MINI-ROLLS WITH APRICOTS Special equipment needed: 1Z small skewers or stuffing pins 12 broiler - fryer chicken thighs, boned 3 /4 teaspoon salt 1% teaspoons instant minced onion 1% teaspoons parsley flakes 24 small dried apricot halves 3 tablespoons slivered almonds % cup spur cream ¥2 cup apricot jam 3 tablespoons brown mustard Hot cooked rice ^5^ RS* r »flV/ £& o To bone chicken thighs, cut along thinner side of thigh to the bone, slashing thigh the length of the bone. Holding one end of the bone, scrape the meat away until bone is free. Cut off rounded piece of cartilage. Place boned thighs skin side down on cutting board. Sprinkle with salt, instant minced onion and parsley flakes. Place 2 dried each boned thigh; sprinkle with Slivered almonds. Fold sides over apricots and almonds; fasten with skewer. Place rolls skewered side down in foil-lined shallow baking pan. Bake in 400 degrees F. oven 40 minutes. For sauce, combine sour cream, jam and mustard in small saucepan. Heat just to serving temperature; do not boil. Place mini-rolls on rice on serving platter. Turn sauce into dish; garnish with toasted slivered almonds, if desired. YIELD: 6 servings. PALOMINO PUDGE (Mrs. John Parke) 1 pound light brown sugar i cup granulated sugar 1 stick butter or margarine 1 can evaporated milk 2 8-ounce packages of butterscotch morsels 1 jar marshmallow cream 1 cup walnuts, chopped 1 cup golden raisins J /4 cup rum % teaspoon vanilla extract The night before making fudge, put raisins into rum in a jar and let soak overnight. The next day, combine sugars, butter or margarine and milk in heavy saucepan; heat over medium heat until butter is melted. Stir occasionally. Continue heating until mixture reaches 238 degrees F. or; a candy thermometer or the soft ball stage. Remove from heat; stir in butterscotch morsels and marshmalJow cream until well ni'vcd Add nuts, soaked raisins and vanilla. Pour info buttered pans. Cut into squares when cool. Makes 3M> pounds. CHOCOLATE SNAPPERS (Mrs. Edgar Snell) 1 cup sugar Refreshing maple milk shake Maple milk shake is a seasonal way to a nutritious refresher. Mix 2 to 3 tablespoons maple flavored syrup, J /4 teaspoon vanilla, and 1 cup milk in mixer or shaker. Add a large serving of vanilla ice cream and shake. Makes 1 serving. QUICK SALAD DRESSING Dairy sour cream mixed with catsup or chili sauce makes a quick salad dressing or dunk for vegetables sticks. 3 /4 cup soft shortening 1?S6 J /4 cup corn syrup 2 1-onncfi envelopes m«K* ed chocolata ! 3 /4 cup flour 2 teaspoon 3 baking soda' 1 1 teaspoon cinnamon 5 /4 feaspoon salt Combine sugar, shortening and egg; beat until creamy. Stir in corn syrup and chocolate. Sift fjotif, soda, cinnamon and salt; add to chocolate mixture. Shape into balls using one level tablespoon for each. Roll in granulated sugar. Place on ungreased cookte sheet. Bah» at 350 degrees F for lo minutes. Let stand a few minutes before removing from pan. Makes 3 dozen.
