a-B THE BAYTOWN SUN Wednesday, December 1, 1982 Cookies Conform To Low-Sodium Diet Here is a spiced sugar cookie that is low in sodium calories. SPICED SUGAR COOKIES 1V4 cups flour 1 teaspoon low sodium baking A HEARTY luncheon salad becomes the star of the meal with a variety of ingredients combined with salad dressing mix. Salad Pleases Crowd Serving a crowd these days can be a fun challenge when you combine a few basic ingredients — a little imagination .— a little budget — and a spectacular salad. This is the formula for this main course Hearty Luncheon Salad that will become a mainstay for easy luncheon or supper entrees. This salad combines macaroni, ham, vegetables and cheese complemented by cheese garlic salad dressing mix. HEARTY LUNCHEON SALAD 2 cups elbow macaroni 3 quarts (about) boiling salted water % cup prepared garlic or cheese garlic salad dressing Vi cup mayonnaise 1M> cups sliced celery Vz cup grated carrot % cup sliced radishes 1 medium green pepper, chopped 1 small onion, sliced 3 medium tomatoes, cut in eighths ',*> pound sliced broiled ham, diced '£ po.und sliced process American cheese, diced Cook macaroni in boiling salted water in large saucepan until tender, about 10minut.es. Drain. A'.kl':, cup of the salad dressing and chill several hours or overnight. Combine remaining salad dressing and the mayonnaise; chill. Just before serving, add the vegetables, ham, cheese, and the mayonnaise mixture to the macaroni; loss lightly. Service on crisp salad greens. Garnisn with i hard cooked egg edges and greeii ! . pepper strips, if desired. i powder, Vfe teaspoon ground nutmeg Vfe cup plus i tablespoon sugar V< cup salad oil 2 egg whites Grated peel of 1 fresh lemon 1 tablespoon fresh squeezed lemon juice Sift together flour, baking powder and VA teaspoon nutmeg. In bowl, combine ft cup sugar and oil. Add egg whites, lenion peel and juice; beat well. Add dry ingredients, mixing well. Chill 1 hour or longer. . Combine remaining l tablespoon ' sugar and, '/< .teaspoon nutmeg. To make cookies, shape dough into %-inch balls; dip balls into sugar mixture. Place on greased cookie sheets. Bake at 375 degrees for 10 minutes. Cool on wire racks. This kitchen tested recipe makes about 3 dozen (2 mg. sodium, 44 calories per cookie). Berries Always Good Besides being deliciously tangy 'n tart and a feast for the eyes with their deep, rich red color, cranberries are good for your health. According to Family Circle cooking feature, "Cranberries Aren't Just For Thanksgiving.'" they're high in Vitamin C and potassium (a nutrient many of us miss out on) but low in calories — a half cup contains only 25 calories. Besides recipes for cranberry desserts, breads and sauces, the Family Circle article offers the following tips on choosing, using and freezing cranberries. « To pick perfect cranberries, look for berries with a high luster, which indicates they're fully ripe. They should also be firm and plump. • Store fresh cranberries in the refrigerator — unwashed.
