Summer Enjoyment Potato Salad The time when all of us move out-of-doors whether it be to the patio, the beach or just a Mgh- rise balcony. What would a summer menu be without potato salad? Some- how, a creamy potato version is wanted and expected with every menu. Hot Creamed Potato Salad combines the best of two popular potato salad versions, ft is both hot and creamy. A flavorful cream sauce combines assorted vegetables while tangy dairy aour cream adds mat special zip to make this potato version a real delight. Cheese and cold meat platters are quite popular for warm weather eating, and they would go wonderfully with Hot Creamed Potato Salad. When planning meals, both indoors and out, be sure to plan a balanced menu that is centered around the four basic foodgroups-the milk group, the meat group, the Jtruits and vegetables and the breads and cereals groups. HOT CREAMED POTATO SALAD 2 tablespoons butter 1 cup thinly sliced celery 1/4 cup sliced green onion 2 tablespoons flour 2 tablespoons sugar 2 teaspoons salt 1 teaspoon paprika 1 teaspoon dry musterd 1/4 teaspoon pepper 1 cup milk 1/4 cup vinegar 4 cups sliced cooked potatoes TBB NEWS. FnMck, Map* it MW 1/2 cup diced green pepper 1/2 cup dairy sour cream 4 slices bacon, fried crisp and crumbled Melt butter in large fry pan. Add celery and onion and cook until onion is tender. Combine flour, sugar, salt, paprika, mus- tard, pepper and milk. Add to celery mixture. Cook, stirring eon* stantly, until thickened. Stir In vinegar. Add potatoes and green pepper; stir carefully to coat with dressing. Heat thoroughly. Stir in sour cream just before serving. Sprinkle with crumbled bacon.
