THURSDAY, JUNE 27, 1968 Chic And Sophisticated Sour Cream By IDA BAILEY ALLEN rnurr CREAM PIE SUPREME & cup sugar % e.. conwtarch !/4 tep. salt. i c. milk 3 egg yolks l tbsp. butter % tsp. vanilla 1 e. dairy chopped date*, •lioed bananas, 8" bakad pastry shell To tttke the Filling: Combine sugar, cornstarch and salt; add milk and mix thoroughly. Stir-cook over medium heat until filling mixture boils and is very thick. Add a small amount of hot filling to slightly beaten egg yolks; mix well; pour back into remaining filling and cook 1 min. more, stirring constantly. Add butter and stir until melted and smooth. Cool slightly; fold in vanilla, sour cream and fruit. Pour inter 9" baked pie shell. Cover with meringue and bake at 350 degrees F., 12 to 15 min. or until lightly browned. Cool and serve. THE CHEF'S MERINGUE Ingredients: 3 egg whites, i/ 2 tsp. salt, 6 tbsp. sugar. To make: Beat eggs \v1th salt with rotary beater until frothy. Add sugar, a tbsp. at a time; continue beating until sugar is dissolved and meringue holds peaks but is still glossy. Spread over pie filling, being careful that meringue completely covers filling and touches edge of pie-crust. Bake in 350. degree F. oven for'12 to 15 min. or until lightly browned THE CHEF'S ICE CREAM BOUQUETIERE Take your choice: Bake a 9" pie-crust shell of pastry for sweet tarts, or bake Graham Cracker Crumb Crust. pie-plate. Spread bottom with %" layer of raspberry or boysenberry jam. On thii, arrange layer of half-thawed frozen peaches or drained canned Elbertas, ... or sugared fresh peaches. Spread over 1% ,pts. room-softened peach or vanilla ice cream. Border edge with sweetened whipped cream; top with puffy whipped - cream rosette, strew with candied rose petals and crushed candied violets, or with swirls and curls of bittersweet chocolate. Freeze at least 2 hrs. Allow 80 min. for thawing at room temperature. Serves 10. SOFT CUSTARD BANANA TRIFLE 2 c. milk 1 egg 1 tbsp. enriched flour 1/4 c. sugar % tsp. salt % tsp. vanilla or other flavoring 1% cups sliced sponge or angel cake 4 bananas for slicing To make custard: Scald milk in double boiler. Slightly beat egg; add flour, sugar and salt. When well mixed, stir into scalded milk. Cook • stir until mixture coats spoon. Add the flavoring. •, '. To Complete-: In glass serving bowl, arrange alternate layers of sliced day-old sponge or angel cake and sliced bananas. Pour over the custard. Chill; serve garnished with additional sliced bananas.
