One of the easiest to identify and easiest to harvest foraged foods of all is the common, ordinary cattail. Two or more parts of the plant make tasty munching during any season of the year and the cattail can be eaten in so many ways that knowledgeable outdoorsmen call it the "supermarket of the swamps." Cattail roots can be peeled and ground into flour almost any time of the year and the lump where those roots join the plant's stem is passable boiled, roasted or fried like a potato. The green spikes (that later develop into fuzzy "tails") are good boiled, salted, drenched in butter and eaten like corn on the cob in early summer. Later in the season cattail pollen (easily shaken into a bucket) makes satisfying pancakes, muffins and bread. The best cattail eating of all, though, is known as Cossack asparagus. Tiiis is the base of the stem and it makes a great salad filler from earliest spring to late fall. Just peel back the outside layer or two of "leaves," grab a cattail stem and pull. It will break off at ground level quite easily. Cut off the tenderest and tastiest section of the white stem base, wash it once in clean water, slice and add to a salad ... or just eat your Cossack asparagus like celery! 14 • DES MOINES SUNDAY REQISTER/AUO. 24, 1975
