Alton Evening Telegraph Wednesday, Sept. 13,1972 Try cherry baked Alaska nt next party Have you ever been hostess fo^J* party and discovered (faring the event that one of your guests is celebrating a Birthday, or have you ever found yourself the hostess of a Birthday Party for someone who feels he's too old for a Birthday Cake? "Elegant Cherry Baked Alaska" is the perfect cake for the unexpected celebrator or that extra special occasion. The name might lead one to believe it is very difficult to assemble, but the actual preparation time is only 15 minutes. The creation of the original Baked Alaska is associated with the purchase of the Territory of Alaska. Cake, ice cream and meringue are the ingredients of the complicated appearing dessert. The fascinating thing about Baked Alaska is the fact that the ice cream can be baked without melting. The flavor and texture difference between hot and cold is also very exciting to the taste buds. The basis for this "Elegant Cherry Baked Alaska" is a frozen completely baked cherry cheese cake. The cheese cake filling is comprised of approximately 50 per cent cream and bakers' cheeses, which is placed on a rich crisp crust of graham crackers. Remove the frozen cake from foil and place on lid. Instead of ice cream, cover the top with a layer of marshmallow fluff and a layer of slivered almonds. While the frozen cake • sets at room temperature, prepare the meringue. ' Cover entire cake with meringue and bake at 425 I degrees, 5-7 minutes. A beautiful eating experience is biting into the warm meringue, followed by crunchy almonds on a bed of marshmallow, juicy Montmorency Cherries and finally the cold smooth cheese cake. A very special dessert for the unexpected celebrator or for that very special person who no longer believes in Birthday Cakes. For a real celebration, top the cake with a lighted sparkler. ELEGANT CHERRY BAKED ALASKA 1 completely baked, fresh frozen Cherry Cream Cheese Cake % cup marshmallow fluff l-3rd cup chopped almonds 3 egg whites, stiffly beaten % teaspoon salt l-3rd cup granulated sugar 1 A cup shredded coconut Remove frozen cherry cream cheese cake from foil pan. Place cheese cake on package lid. Spread the marshmallow fluff over cherry topping. Sprinkle with almond pieces. Let stand for one hour. Place cheese cake on baking sheet. Preheat oven to 425 degrees. Beat egg whites and salt until frothy. Gradually add sugar and beat until egg whites are stiff enough to hold a glossy peak. Reserve 2 tablespoons of coconut. Fold remaining coconut into stiffly beaten egg whites. Cover entire cheese cake with meringue. Sprinkle with remaining coconut. Place in preheated 425 degree oven for 5 to 7 minutes or until delicately browned. Serve immediately. Yield: 6 servings.
