Alton Evening Telegraph Wednesday, Sept. 13, 1972 Lamb shanks star in this Greek dish In these days of high food prices, braising relatively inexpensive cuts of meat is one good way to cut the supermarket tab. A tremendous range of innovation opens up when you break out of the broil - barbecue • pan fry habit. Braising allows all kinds of subtle seasonings to permeate the meat. And, an economical cut such as l?mb shanks is even better when baked after braising. The result is crisp outside texture while still maintaining the marvelous flavor and tenderness only braising can give. Frozen or packaged forms of potatoes offer another great way to economize. Unlike many other convenience foods, these work- saving products do not cost any more than the fresh product. And, during the season when fresh Idaho potatoes are hard to find, you can be sure of the same fine quality and flavor if you look for frozen and instant products made from potatoes. Greek Lamb Shanks with Potato Bundles is a meal that belies its economical intent. This recipe is sure to be an often-requested family favorite. During the potato season (October through May), try this dish with fresh potatoes halved or quartered Just add them to the lamb shanks before putting in the oven. The unique mealy texture of potatoes absorbs the delicious flavor of this dish. GREEK LAMB SHANKS WITH POTATO BUNDLES 6 lamb shanks 1 bunch celery tops 1 clove garlic, split 1 bay leaf 12 peppercorns 1 teaspoon salt 14 teaspoon dill weed Flour 1 cup dry red wine i/4 cup salad oil 2 packages -(9 ounces each) frozen French fries 2 cups halved and seeded grapes Put first 7 ingredients in a large kettle, cover with water, and simmer 1 hour. Preheat oven to 375 degrees. Remove shanks, dust with flour, and arrange in a shallow baking pan. Pour wine and oil ovef thanks. Divide frozen French Me* into 6 portions and tie each with kitchen cord. Place in baking pan with the shanks. Bake 35 to 40 minutes, basting frequently with drippings. Spoon grapes over tneat. Continue baking until grapes are hot. Makes 6 servings. i Refreshing juices have a variety of good mixers— gingerale, sherbet, ice cream, fruit, fruit juices and spices. FOOD STAMPS ALICE DENHOFF How about a coolish, delicious punch, one perhaps that reca'ls cooler months, made with apple juice. Use this flavotsome juice for some fine coolers, quickly prepared and so good with a cookie or dainty sandwiches. First: APPLE PUNCH 2 quarts chilled apple juice 2 quarts chilled ginger ale % cup lemon juice % cup grenadine syrup Strawberries or blueberries, frozen in ice cubes Combine all ingredients. Pour into punch bowl over strawberries or blueberries frozen in ice cubes. Makes 4 quarts. Incidentally, it's a capital idea to have on hand during the summer, one ice cube tray of fruited ice cubes. This punch is a beaut for a hot, thirsty crowd. APPLE LEMON COOLER 1 quart chilled apple juice 1 pint lemon sherbert, softened 3 tablespoons maraschino cherry juice Combine ingredients and beat until foamy. Pour into tall glasses. Serves 8. INSTANT APPLE TINGLER 2 cups chilled apple juice 1 cup chilled orange juice 1 cup chilled grape juice 2 tablespoons lemon juice Combine sugar, 1 cup apple in a pitcher or tall glasses. Serves 6. APPLE-APRICOT COOLER 2 quarts chilled apple juice 1 quart chilled apricot nectar 1 quart chilled club soda 14 cup lime juice % teaspoon peppermint extract Combine ingredients. Pour over ice in punch bowl. Serves 16-20. SURPRISE SPICY REFRESHER 1 cup sugar 2^ quarts apple juice 1% teaspoons cinnamon ^ teaspoon cloves l /4 teaspoon ginger 1. quart chilled pineapple juice % lemon juice Combine sugar, 1 cup apple juice and spices in a saucepan. Boil for 3 minutes. Cool. Combine with remaining apple juice and other ingredients. Pour into a punch bowl. Makes 4 quarts. FROTHY APPLE JUICE COOLER 1 quart chilled apple juice 1 pint softened vanilla ice cream 1 can (8% ounces) crushed pineapple, drained % teaspoon cinnamon Combine ingredients. Beat in a blender or with a rotary beater until frothy. If desired, garnish each serving with mint leaves and pineapple cubes on skewers. Makes 2 quarts.
