Served in a Chinese wok or a large shallow casserole, it makes a beauty of a dinner, steak recipe from China By CECILY BROWNSTONE Associated Press Food Editor DEAR CECILY: I am interested in a recipe for Green Pepper Steak. Do you have one on hand that you could use in your column'?—GRATEFUL. DEAR GRATEFUL: I'm not surprised that you want a recipe for Green Pepper Steak because Chinese-style dishes seem to interest a good many cooks these days. When you order Green Pepper Steak in a Chinese restaurant you usually get a lot of sauce, a lot of green pepper and a sparse amount of steak. The following recipe for Stir-fried Steak and Ureen Peppers is a little different: the sauce is just enough to flavor the other main ingredients—a goodly amount of both green peppers and meat. Peanut oil is added for the stirfrying because that's the oil that many Chinese chefs use.— C.B. STIR-FRIED STEAK AND GREEN PEPPERS 1 pound flank steak 2 teaspoons cornstarch 1 teaspoon ground ginger 1 teaspoon sugar 3 tablespoons soy sauce 1 tablespoon medium sherry V4 cup peanut oil 4 large green peppers, seeded and cut into '--inch strips Hot cooked rice Place flank steak in freezer until partially frozen—about 45 minutes. Trim off and discard any excess surface fat or meat. Slice steak on an angle into very thin crosssvise slices. In a medium mixing bowl stir together the cornstarch, ginger, sugar, soy sauce and sherry until smooth. Mix in meat. I,et stand 20 minutes. In a large skillet heat the oil over high heat. Add green pepper. Stir-fry 1 minute. Mix jn meat. Cook and stir until meat loses its red color — about 4 minutes. Stir with rice. Makes 4 servings. Arrange generous chunks of hot, cooked, fork-tender beef in a serving dish along with cooked green beans and pineapple chunks. Top with a sparking, tart, sweet-sour sauce. Roll big slices of banana in honey and toasted coconut. Heat with the other ingredients, and the dish is ready for serving. Why not have an Islands party? It's easy and great fun. Table decorations, plastic or paper leis, muumuus and aloha shirts are readily available in department or party stores in most cities. Here's a menu that calls for Islands-type food easily located in food stores on the mainland. Add onion, garlic, salt and ginger; cook slowly until onion is tender. Drain, pineapple; save syrup. Add water as needed to syrup to make 2 cups liquid. Add Vi cup liquid to meat. Cover; cook meat slowly until fork-tender, about 2 hours. Combine remaining 1'i: cups liquid, bouillon cube, sugar, vinegar, cornstarch and molasses in small saucepan; mix. Cook, stirring constantly, until thickened. Arrange meat in mounds on opposite sides of large flame-proof serving dish. Arrange green beans am.' pineapple between meat mounds. Drizzle sauce over meat, pineapple and beans. Cover ctiul heat 10 to 15 minutes. Dip banana slice? in honey and roll in coconut: add to serving dish tind heat through, about o minutes.
