There are all sorts of Interesting ways to use cooked corn, such as: CORN AND OLIVE SALAD 3 hard-cooked eggs 3 cups whole kernel corn Vt cup sliced pimiento- stuffed olives 2 tablespoons snipped chives % cup mayonnaise 1 teaspoon ground cumin Dash pepper Lettuce Whole pimiento-stuf fed olives 1 teaspoon chili powder V4 teaspoon salt Coarsely chop 2 eggs; reserve third egg for garnish. Combine chopped eggs with next 8 ingredients in bowl. Cover and chill. Mound salad in lettuce-lined bowl. Garnish with reserved egg cut in wedges, and whole olives. Serves 6. (Cut the corn from' the ears of from 6 to 8 cooked fresh corn.) Next, no corn, but a nice: SPANISH OLIVE AVOCADO MOLD 2 envelopes unflavored gelatin 1 cup cold water 1 tablespoon lemon juice 2 medium avocadoes, peeled, pitted and mashed % cup chopped pimiento- stuffed olives 1 tablespoon chopped chives 1 teaspoon salt ¥4 teaspoon pepper % cup sour cream Vt cup mayonnaise Tomato wedges Soften .gelatin in water. Stir over low heat until gelatin is dissolved. Stir in lemon juice and gelatin into mashed avocado and then add next 4 ingredients, mixing well, Fold in sour cream and mayonnaise. Turn into 1-quart mold. Chill until firm. Unmold and garnish with tomato wedges. Serves 4. SALAD NICOISE % teaspoon salt ¥4 teaspoon pepper 1 teaspoon prepared mustard V4 cup wine vinegar % cup olive or salad oil 1 cup cooked cut green beans, drained and cooled 2 medium potatoes, cooked, cooled, pared and sliced 1 medium onion, thinly sliced 1 clove garlic Lettuce 1 medium green pepper, thinly sliced 2 cans (2 ounces each) flat fillet anchovies, drained and chopped 1 can (6V2 or 7 ounces) tuna, drained and broken into chunks % cup pimiento-stuffed olives 4 medium tomatoes, cut into eighths 2 hard-cooked eggs, quartered Combine first 5 ingredients; beat until blended. Combine half of oil dressing with beans, potatoes and onion; chill several hours. Rub salad bowl with garlic and arrange lettuce in bowl. Form a "pyramid" of green beans, potatoes, onion, green pepper, anchovies, tuna, olives and tomatoes in bowl over lettuce. Garnish with eggs. Add remaining oil dressing just before serving; toss. Serves 6. All these salads, so right for this time of year, owe much to the Spanish olives not only for tangy flavor but pretty color, pleasing the eye as well as the palate. Into a 1%-quart saucepan turn the sugar, water and cinnamon. Tie cloves and allspice in a cheesecloth bag and add. Bring to boiling point and add one- t&jrd wf• the plums at a time.
