"' HWnetnade pickles add zost to any meal . . . anytime, fhesc sweet pickles have a spicy, tangy flavor that goes well with all types of meats. Cucumbers will be available in good quantity this voar from now through the middle of September. RIPE CUCUMBER PICKLES 8 large Cucumbers 14 cup salt in 2 quarts water 2 boxes (1*4 ounces each) stick cinnamon 1 box (1^6 ounce) whole cloves 6 cups granulated sugar 3 cups cider vinegar Pare cucumbers, quarter and remove seeds. Cut ench quarter Into 1-1% inch pieces. Place into large saucepan or kettle and add the 2 quarts water with % cup salt. Bring to boll, uncovered. Turn heat to low and simmer for 8 minutes. Drain, rinse well with clear water, drain again and place In a large bowl. Tie stick cinnamon and cloves in a piece of cheesecloth to make a spice bag. Place in a large saucepan with sugar and vinegar. Bring to a boil, stirring constantly, until sugar is dissolved, continue boiling uncovered for 10 minutes. Immediately pour syrup and spice bag over cucumbei s in bowl, cover with a plate and allow to sit for 24 hours. Pour syrup and spice bag off pickled cucumbers and boi! again, uncovered for 30 minutes. Pour over pickles and allow to sit another 24 hours. Boil syrup and spice bag again for 10 minutes. Place pickles in hot, sterilized jars, pour the boiling syrup over pickles and seal immediately. Discard spice bag. Here's another way to use your fresh cucumbers!
