PAGE THIRTY-FOUR ALTON EVENING TELEGRAPH THURSDAY, SEPTEMBER 26,1963 Mountain Pork Chop Dish Swell B.v POPPY CANNON Of all the scents in all the world there is none more inviting on a crisp September evening than the fragrance of onions ami pork chops a-frying- In the Auge mountain region of France, they have a very special way of cooking pork chops with cider and shallots — th«c rosy little cousins of the onion which impart a subtle flavor that is part onion, part garlic, all Heaven. But since shallots are so hard to find in this country, we use sweet red onion instead and a little garlic. So we come quite close, we think, to the original taste. Even the aromas are haunt-' ingly similar. Augc Mountain Pork Chops Chop 6 shallots or 1 small red onion and Vz clove garlic. Combine with an equal quantity of finely chopped parlsley. Score 4 thin pork chops lightly on each side. Sprinkle with salt and pepper and spread with the herb mixture. Brash with olive oil and broil slowly about 4 inches under the broiler. Have ready 1 cup cider heated in a small pan. When the chops are cooked, put them in t h e i i broiling pan on top of the stove Pour in the cider. Let it bubble over high heat about 2 or 3 minutes until all the juices of the meat have formed a sauce. In France, at this point, they would stir in a couple of tablespoons of calvados which is apple brandy — quite similar to our applejack. It is supposed to cut the richness of the pork. Meal of The Day Auge Mountain Pork Chops Straw Potatoes Cucumber and Green Pepper Salad Compote of Plums Spice Cake Auge Mountain Pork Chops. . . See starred recipe. Straw Potatoes. . . These are very finely cut French fried potatoes. Canned, shoestring or quick-frozen potatoes may b e substituted. In France these potatoes are re heated by being toss-1 ed in a small quantity of butter. Cucumber and Green Pepper Salad. . . Peel and slice thinly 2 cucumbers. (If there is time, sprinkle with a little salt and let them stand for Vz hour.) Drain and place in salad bowl. Sprinkle with 1 teaspoon vinegar; 3 tea spoons salad oii. Cul a swet- green pepper in julienne strips and dress with a small quantity of vinegar and oil and salt and peppers on the cucumbers. Garnish with 3 thinly sliced fresh firm mushrooms. Frost with a little mayonnaise. Serve on lettuce. Compote of Plums. . . Drain a can of purple plums and into the syrup stir V 2 cup black cherry jam. Cook uncovered 5 minutes. Replace the plums in the syrup. Chill in the freezer. At the last minute you may add a f e w pine i nuts that have been crisped in i the oven. (® 1963, General Features Corp.)
