How to Make Your Own Pork Sausage at Home By UNCLE FRANK KOHLER (Chief Skllleteer) Have you tried your hand at tone made fresh pork sausage meat? This is becoming quite a popular hobby, and the successful family seasoning formula is often a treasurer and closely guarded secret. Consult your butcher about the less expensive pork cuts to use. We use Jeah meat entirely, but some put in as much as one part pork fat to six parts lean meat. The sausage must be kept refrigerated, and is best used within 36 hours of the mixing - but it should refrigerate for at least 12 hours after mixing, to let the flavors merge and blend. For 3 pounds of fresh - ground lean pork, we suggest as a starter the following seasoning mixture: 2 teaspoons pulverized dried sage or thyme 1 teaspoon monosodium glutamate powder 1 tablespoon black pepper (Preferably medium ground) % teaspoon cayenne pepper 1 tablespoon salt 1 teaspoon garlic salt % teaspoon pulverized dried marjoram % teaspoon allspice (optional) Conduct your own experiments to achieve a flavor that pleases you. The allspise may be replaced by ground coriander, or clove, ginger, mace or nutmeg if y o u like, or some of several of them. Remember, if you get this too highly spiced to suit, just mix in more meat! Cook as you would any commercial fresh sausage meat. Lamburgers Polynesian for 4. This one is very, very South Sea Island, or maybe even Hawaiian. 1 can (5 ounces) water chestnuts, drained and chopped 1 pound ground lean lamb 1 egg, beaten 1 tablespoon minced chives (or green onion tops) % teaspoon salt % teaspoon onion salt % teaspoon ground ginger 1'teaspoon soy sauce 1 can (9 ounces) pineapple slices 1 teaspoon cornstarch 2 teaspoons lemon juice 14 teaspoon black pepper Drain and save liquid from the water chestnuts, and chop them. Combine chestnuts and 2 tablespoons of their liquid with the lamb and next 6 items and mix well. Form into 4 rolls of meat, each about 2Yz inches in diameter. These may be pan fried or broiled about 4 - inches below direct broiler heat. Turn to brown evenly on all sides. They need about 15 to 18 minutes of cooking. While the Iamb cooks, drain the pineapple slices and blend the syrup with the cornstarch. Heat in a small saucepan with lemon juice, remaining chestnut liquid, and the pepper. Cook over moderate heat, stirring constantly, until sauce is smooth and thickened. Slice each pineapple slice in half and place 2 halves over each roll. Place under broiler just long enough to slightly brown the pineapple, then carefully remove to a hot platter and pour the sauce over.
