C42 Alton Evening Telegraph Sebastian sandwich popular Seventeen years ago the Reuben sandwich was a grand prize winner In a national sandwich contest. The sandwich, created by Arnold Reuben, founder of Reuben's restaurant in New York City, soon became popular with the famous after-theatre diners at the restaurant and eventually became known nationwide. Another sandwich destined fo be famous as the Reuben Is The Sebastian, grand prize winner in the 17th National Sandwich Idea Contest- Created by Sebastian Di Meglio. Vice President and Director of Hotels and Restaurants for the Colonial Williamsburg Foundation, The Sebastian, like the Reuben, is a rye bread sandwich. It includes mayonnaise chutney dreswxl slaw, baked ham and cheese prilled unt.il golden. In the kitchens of specialty bakers, where their own version of the Reauben sandwich is made with English Muffins, news of The Sebastian provoked a quick taste testing session. The Sebastian 2/3 cup real mayonnaise 1-3 cup chopped chutney 1 tablespoon curry powder 1 teaspoon salt 3 cups shredded cabbage (medium shred) 6 English muffins butter or margarine 6 slices (1 ounce each) cheddar cheese 6 slices, thinly sliced, cooked ham Mix together mayonnaise, chutney, curry powder and salt. Toss with cabbage. Split English muffins by scoring with tines of fork and gently pulling apart. Toast; butter. Spoon about. Vi cup, loosely filled, slaw on each muffin bottom half. Place cheese and ham slice on top of slaw. Cover with top halves. Bake In 450 degree F. oven alx'tit 6 minutes or until cheese is melted and sandwich heated. Makes 6 sandwiches. Open-Face Chicken And Artichoke Muffin 3 cups diced cooked chicken 2 jars (6 oz. each) marinated artichoke hearts, diced (reserve marinade) •% cup dairy sour cream % teaspoon salt % teaspoon pepper 6 English muffins Butter or margarine Lettuce leaf cups 1 tablespoon chopped chives 1% teaspoons paprika Mix together chicken, artichoke hearts and marinade; cover and refrigerate about 2 hours, stirring occas'onally. Drain marinade from chicken and artichoke mixture; stir in sour cream, salt and pepper. Spilt English muffins by scoring with tines of fork and then gently pulling apart Toast and butter. Place lettuce leaf on each muffin half. Fill with about 1-3 cup chicken mixture; sprinkle with chives and paprika. Garnish with dill pickle slices and ripe olives. Makes 6 servings. 1 cup diced cooked crab 1 cup diced cooked lobster 1 cup diced celery ^2 cup real mayonnaise 1 tablespoon sliced green onion 1V> teaspoons prepared brown mustard Vl> teaspoon crumbled terragon leaves V; teaspoon salt Vs teaspoon hot pepper sauce C English muffins 2 egg whites 2-3 cup real mayonnaise 1/4 cup grated Parmesan cheese 1 tablespoon lemon juice Stir together crab, lobster, celery, % cup mayonnaise, Onion, mustard, tarragon, salt and hot pepper sauce, Split English muffins by scoring with tines of fork and then gently pulling opart. Toast. Spread (about 3 tablespoons^ seafood mixture evenly on each muff 111 hall. Beat egj; whites until t.*ifi, fold in 2/3 cup mayonnaise, cheese and lemon juice. Spoon egg mixture on top oi mixture. Broil 8 inches from source of heat about 3 minutes or until golden brown and puffy. Garnish with sweet cherry peppers, ripe and green olives. Makes 6 sandwiches.
