Rut many of us abuse, these good friends by over-conking or drowninc tlinn in too much water. Young, tender greens should he cooked only in the water that clings to their leaves. They are delicious served with a sprinkle of fresh lemon juice, butter or crumbled hacon. The flavorful leaves can also be cooked in a heavy frying pan in a small amount of butter and boiling water. This is similar to the Chinese method of panning vegetables. It is healthful because it conserves the valuable nutrients. Raw spinach, kale or mustard greens can be used in the making of tasty and unusual salads and their dark leaves can add variety to everyday meals. Spinach is combined here with lamb in an excellent recipe. SPINACH AND LAMB, ARMENIAN STYLE 1 Ib. lean shoulder of lamb stew meat 1 c. sliced onion 1 c. boiling water 2 Ibs. fresh spinach 2 c. diced fresh tomatoes IVi tsp. salt. % tsp. black pepper 2 tbsp. flour 2 tbsp. cold water Trim excess fat from lamb and cut in 1-inch cubes. Brown on all sides in some of the excess fat trimmed from meat. Add onions; cook slowly 15 min. Do not brown. Add boiling water. Cover and cook until meat is tender, about 1 hr. In the meantime, wash spinach and cut into large pieces. Add to lamb together with tomatoes, salt and pepper 15 min. before cooking time is up. Mix flour to a paste with cold water; stir into stew, cook only until slightly thick, about 1 min. Serve at once as both main dish and vegetable. Serves 6. FRESH SPINACH, ITALIAN STYLE 3 Ibs fresh spinach % c. butter or margarine 1% tsp. black pepper % c. chopped raisins 2 tbsp. chopped nuts Remove bottom of stems and wash spinach thoroughly. Cook only in water that clings to the leaves in covered saucepan until crisp-tender—6 to 8 min. Drain well, Chop fine. Melt butter or margarine in skillet. Add salt, pepper and chopped spinach. Heat. Stir in raisins and nuts just before serving. (If using salted nuts, reduce slightly the amount of salt.) Serves 6. A good dressing does much for vegetable salads. Try this. HERB SALAD DRESSING 1 pkg. herb salad dressing mix % c. tomato juice % c. salad oil % c. wine vinegar Stir mix into tomato juice. Add rest of ingredients; mix well and chill. Makes about 1*4 cups of dressing. Khrushchev Raps Lack Of Fertilizer MOSCOW (AP) — Angry over another poor harvest, Soviet Premier Khrushchev has berated farmers for inefifciency and assail bureaucrats for exporting fertilizer when it is needed for Soviet fields. "We oxjjort mineral fertilizers because our economists haven't learned yet to calculate realistically what this costs," he told a farm meeting in Volgograd—for- merly Stalingrad. "If they calculated, then they would see that it would be better to put a ton of these fertilizers in the earth. It would be morn economical to export the grain received than mineral fertilizers. And only alter we have fully satisfied our domestic needs for mineral fertili/crs can we then ex port them." Fertilizer always has been short because much of the Soviet economy is devoted to heavy industry. But in his speech published in the Soviet press, Khrushchev said farmers often neglected to use the fertilizer they have. Khrushchev said fields in Yugoslavia, where he recently visited, produce higher grain yields than Soviet fields because of the use of fertilizer. Khrushchev clearly was in n sour mood when he addressed the farmers. When one asked for additional irrigation pipes, he snapped: "I didn't come Jto you from the supply section.
