""' "" ..... •" : " ----- i _ Potatoes Even Have Secrets By POPPT GANNON Lamb chops, potatoes, aspara gas ... a good, sound, practJca combination, hardly earthshak ing or original! But add a few deft touches of haute cuisine Voila ... a dinner of great distinction. Begin with an appetizer-salad . . . nothing wore than glamorized (canned or quick-frozen) chopped chicken livers mounded crown - like on artichoke bottoms if you're feeling lavish, or on firm slices of tomato. Insteac of the usual lamb chops, why no have lamb steaks or large (less- expensive) shoulder chops? Serve asparagus (fresh frozen or canned) with Sauce Allemande —your old friend, cream of mush room soup, transformed with a few judicious additions. Even the potatoes have a secret ... a touch of sugar and a bit of meat extract added to the butter in which they are heated. Artichoke Crown Salad To serve 4, drain and chill canned, flat artichoke bottoms We are not talking about the art! choke hearts this time, but the flat part usually about % inch thick and approximately 2 inches in diameter. If artichoke bottoms are not immediately available use firm sliced tomatoes. Season a can or a package of chopped chicken livers with % tea spoon thyme or oregano and smooth in 1 tablespoon softened butter, chicken or bacon fat; just pnougli to give a super luscious texture. Mound the liver neatly on. the artichoke hot toms. Garnish with water cress sweet red pepper or pimiento and onion rings. Sprinkle with finely chopped hard - cooked egg yolk. Iamb Steaks Princesse Have 4 lamb steaks or shoulder chops cut about % inch thick Sprinkle with salt and pepper. Dip steaks first into an egg yolk that has been beaten with 1 tablespoon milk, then into the slightly beaten egg white, then into packaged breadcrumbs. Heat 4 tablespoons butter in a wide skillet until it foams. Saute the lamb steaks, first on one side then on the other until delicately browned and tender. According to Continental ideals, the lamb shouk be slightly on the pink side. Lamb Princesse is usually accompanied by asparagus; truffles too If you have them handy.
