THURSDAY, SEPTEMBER 12,1963 ALTON EVENING TELEGRAPH PAGE THIRTY-ONB Bresse Has Best Chickens By ALICE DENHOFF JUST as California and Arizona are known especially for fine western Iceberg lettuce, Bresse, France, 1« famous for especially fine chickens—plump, tender, with lota of tasty white meat. From thl« region to eastern France comet a recipe for jullenned chicken on shredded lettuce—literally two talads in one. Chevril glve« the salad dressing a Gallic touch. The garnish makes the salad a complete meal. Substitute ctab or shrimp If you want to make a nice meatless salad for a Friday special. The recipe is for 6 servings. BBE8SANE SALAD 1 medium head western iceberg lettuce % c. water % c. oil % c. wine vinegar 1 tablespoon salt \i tsp. pepper % tsp. chevril 3 c. thin, cooked chicken strips, preferably white meat % c. mayonnaise 2 tbsp. catsup % tsp. paprika 1 small green pepper, thinly sliced 1 small red pepper, thinly sliced. 2 (10H oz.) cans green asparagus tips/ 2 hard»cooked eggs, quartered Shred lettuce,, reserving outer leaves to line salad bowl. Combine water, oil vinegar, salt and pepper; mix well. Pour over lettuce; toss well. Drain lettuce; reserve vinegar mixture. Add chevril to reserved vinegar mixture and pour over chicken. Let stand for 5 min., then drain. Line bowl with lettuce leaves; arrange shredded lettuce in bow], then arrange chicken in center. Blend .together mayonnaise, catsup and paprika. Pour over chicken. Arrange peppers, asparagus spears and eggs in an attractive design around chicken. BLEU LIMA SALAD WITH LETTUCE 1 medium head iceberg lettuce 1 (lOoz.) pkg. frozen lima beans % c. wine vinegar 3 tbsp. salad oil 1 clove garlic, crushed % tsp. salt. % tsp. oregano % tsp. celery salt K teaspoon pepper 1 tbsp. chopped parsley K c. chopped onion % c. crumbled bleu cheese 1 c. sliced fresh mushrooms Thinly sliced onion rings Tomato wedges Core lettuce; wash in cold water; drain well. Place in picnic bag or wrap in transparent plastic in refrigerator until ready to use. Cook llmas according to pkg. directions. Drain; rinse with cold water, then drain again. Mix together next 10 ingredients. Chill 1 to 2 hrs., stirring occasionally. Toss with mushrooms and lima beans. Line serving dish with outer lettuce leaves. Tear remaining lettuce into, bite-size pieces and arrange in center. Heap salad on lettuce. Garnish with onion rings and tomato wedges. Serves 6. LETTUCE LUNCHEON SALAD 1 medium head western iceberg lettuce % c. mayonnaise 3 tbsp. dill pickle liquid % tsp. crushed salad herbs Salt and pepper to taste 1 (12 oz.) can, luncheon meat, cut julienne-style % c. shredded carrots % c. diced celery ' % c. chopped dill pickle 2 hard-cover eggs, sliced Core lettuce; wash in cold water and drain well. Combine mayonnaise, pickle liquid and seasonings in large bowl. Tear lettuce into bowl with dressing. Add meatj carrots, celery and pickles. Toss lightly and chill. Garnish with egg slices. Serves 4.
