BARBER Apparently nature has a catho 1 He taste for color in the range of the vegetable kingdom. It supplies generously yellow, green and to some extent shades of red. Blue is, however, ignored except in the case of huckleberries or blueberries. Perhaps that is one of the reasons we look forward to late summer when we can find fresh berries in the market. ;- Even better, we feel, is to lc~ *cate a "bush" where they grow wild and consequently we mark the spot. Because the berries are so firm in texture they are easier than other berries to pick. We serve them with sugar and either sweet or sour cream. We also use them as a flavorful ingredient in pancakes or muffins, or for what we call tea cake. Blueberry Muffins 2 cups sifted flour 3 teaspoons baking powder % teaspoon salt 1 cup blueberries % cup shortening % cup sugar 1 egg, well beaten 1 cup milk Mix and sift flour, baking powder, and salt. Add blueberries to sifted dry ingredients. Cream shortening, adding sugar and cream until fluffy. Stir in well- beaten egg. And dry ingredients alternately with milk, beating well after each addition. Bake in greased muffin pans in moderately hot oven (425 degrees) about 20 to 30 minutes. Yield: 18 small or 12 medium muffins. Blueberry Griddle Cakes 2 ] /& cups sifted flour 5 teaspoons baking powder 1 tablespoon sugar 1 teaspoon salt 1 cup blueberries 1 egg, slightly beaten 2 cups milk >4 cup shortening, melted Mix and sift dry ingredients. Add blueberries. Combine slight"Jy beaten egg and milk and stir into dry ingredients. Stir in shortening. Bake on both sides on un- greased hot griddle. Add more milk if thinner cakes are desired. We appreciate the color ..and flavor that a strip or two -.'Supplies to a garnish or to a salad. Another asset is the fact that unlike most vegetables the whole ."peppers may be stuffed with a flavorful filling. They will keep the form during the process and lose little nutritive value. Peppers should be considered as more than cup-shape • containers. Well-seasoned crumbs may be used a a stuffing or cooked rice -iiay be chosen as the base. During the corn-pn-the-cob season, as it is often called, either cooked or raw corn may be used. The ker- nals should be scraped or cut from the cob. This is a good way to make use of leftover ears if there are any. During the short fresh-corn season we are sometimes tempted to offer more than even addicts can eat at one sitting. Stuffed Green Peppers 6 medium-sized green peppers 1 recipe rice and mushroom stuffing Catsup or chili sauce 3 strips bacon Cut thin slices from stem end of peppers. Remove seeds and fibrous white portion, and wash inside and out under running water. Parboil uncovered in large junount of boiling salted water 5 ••minutes. Drain and fill with stuff- Ing moistened with catsup or chili sauce. Cut strips of bacon in -halves and arrange on pepper "-"place peppers in greased baking pan and bake in moderate oven (375 degfees) 20 to 25 minutes, -until bacon is crisp. Yield: 6 serv- " Ings.
