BARBER Favorite dishes which appear on the table most often are those which we liked as children. Sometimes they may be such simple things as French toast which we may call fried bread. For some reason the French call it Le Pain Perdu or lost bread. In some places It Is called Spanish toast. This shows it is really an international choice. In this country it is usually served with syrup, maple or maple flavored, and considered a dessert, although some might like to make a full luncheon meal of it, and transfer the salad to the evening meal. French Toast 1 egg, slightly beaten 1 cup milk % teaspoon salt 6 slices stale bread Mix slightly beaten egg, milk, and salt. Cut bread in halves and dip in egg mixture. Saute in butter on heavy griddle or in frying pan, keeping pan almost dry during the cooking. Brown evenly on both sides. Or fry in deep, hot fat (380 degrees) until light brown. Drain on soft paper. Serve with syrup or cinnamon and sugar for dessert, or use as foundation for creamed dishes or canapes. Yield: 12 servings. Sugar Syrup % cup water Hi cups sugar Heat water and sugar to boiling, stirring until sugar is dissolved. Cover and boil 1 minute. Remove cover and boil 5 minutes without stirring. Poul into clean hot jar, cover, and store in refrigerator. Yield: about 1 cup syrup. (O 1963. General Features Corp.) Chicken Nugget Appetizers Are Delicious By ALICE DENHOFF Whether It was first the egg then the chicken — or vice versa —we don't know, but what we do know is that today we have on tap some egg and chicken recipes culled with an eye to the appetizer platter. Egg Nugget Appetizers 12 hard-cooked eggs % c. chicken livers, cooked and mashed 1 tbsp. grated onion 1 tbsp. paprika % tsp. (scant) celery salt 3 tbsp. mayonnaise % tsp. salt % tsp. pepper Coating: 3 eggs, additional 1-3 c. water 1% c. fine dry bread crumbs Fat for frying Cut eggs in crosswise-halves Remove yolks and mash with fork or sieve. Combine with remaining ingredients. / Refill whites level full. Set aside while preparing coating ingredients. Beat additional eggs with wa ter. Roll stuffed egg whites in egg mixture, then in bread crumbs. Fry in hot, deep fat (375 degree F.) until coating is brown- about 5 min. Makes 24 egg nuggets, tasty and substantial. Hot Deviled Egga 20 hard - cooked eggs 3 tsp. salad mustard % tsp. pepper % c. mayonnaise or salad dressing 1% tbsp. vinegar 1 pimiento, cut in #-in. pieces % to 1 c. broth or water Cut eggs in halves. Remove yolks and mash with fork or sieve. Add mustard, pepper, mayon naise or dressing and vinegar Beat until smooth. Taste for flavoring, but keep mild since heating intensifies fla vor. Refill whites. Garnish with pi miento bits. Arrange on heat - proof plat ter, on electric grill or frypan Pour in enough broth or water to just cover bottom of utensil. Cover and heat thoroughly in 350 degree F. oven for 15 min. in electric grill or frypan (300 de gree F.) for 20 min. Serve hot. Makes 40 delicious deviled egg halves. Spiced Chicken Wings 4 IDS,, broiler-fryer wings (24 to 30 wings) 2 c. water 1 tsp. salt % tsp. monosodium glutamate Picking Marlnadei 2 c. chicken broth 2 c. cider vinegar 6 drops Tabasco 2 tsp. pickling spice Simmer wings, covered in wa ter, salt and monosodium gluta mate until tender, about 30 min Remove from broth; separat into first and second Joints. Mea sure 2 c. broth for the marinad (set aside any left-over broth to other cooking). Combine broth, vinegar, Tabasco and spices; pour over chick en. Refrigerate 24 to 48 hours.
