THURSDAY, SEPTEMBER 5. 1963 ALTON EVENING TELEGRAPH PAGE TWENTY-FIVE Starring Role Salad Can Be Side Dish or Main Course for Summer By ALICE DENHOFF During the summer the salad, be it a side dish or a main course, plays a starring role on the menu. And, when the classic salad bowl is the main attraction at meals, it is a nice idea to give it a touch of elegance and glamour. Use A Casserole For example, occasionally use a pretty, brightly colored earthenware casserole instead of the usual wooden bowl. Add Interesting cruets, place a pretty pepper mill alongside for grinding fresh pepper to give the salad extra flavor and fragrance. And try and interest the diners in using a pinch of aromatic herbs such as tarragon, basil, dill, chev- ril or rosemary. Good For Dieter* These suggestions are particularly pertinent if calorie-counters are present, since salads constitute one of the major diet items. A tossed salad can be very dull indeed or it can be delicious like this one. Elegant Tossed-Greun Salad 1 sliced garlic clove 1 tsp. salt 2 tbsp. lemon juice V*. tsp. each sugar and pepper '•s tsp. celery seeds % tsp. dry mustard 5 tbsp. olive oil 1 crisp medium head lettuce % crisp, smalll bunch romaine or ] bunch watercress *A c. blanched almonds Va diced, peeled avocado Masli sliced garlic in salt; blend in next 4 ingredients. Add oil, pour into jar and shake well. Chill. Tear greens into bowl; add aJmonds and avocado. Pour dressing \ovefall; toss. Makes 4 servings. From the West comes this fine salad. California Salad 5 or 6 anchovy fillets % c. olive oil 1 split garlic clove % tsp. salt % tsp. drymustard % tsp. sugar I'/i tbsp. wine venegar 1 ql. shredded lettuce ti quartered cooked or canned artichoke hearts 2 coarsely diced, peeled tomatoes 1 diced, peeled avocado Mash anchovies in olive oil; add garlic and let stand for one hour or more; discard garlic. Add salt, mustard, sugar and venegar; blend. Place lettuce in salad bowl; top with artichokes, tomatoes and avocado; pour anchovy dressing on top. Toss lightly. Serves 4 with a tangy, delicious salad. Summer Potato Salad M c. olive oil 2 tbsp. vinegar Itt tsp. salt ^ tsp. pepper 4 c. diced, hot, cooked potatoes 1 minced small onion *& c. mayonnaise 1 f.. ripe olives, cut and pitted 2 diced, hard-cooked eggs 1 c. sliced celery '*/6 c. chopped dill pickle Blend first 4 ingredients togeth er; pour over potatoes; toss. Set aside to cool. Add rest of ingredients; toss. Chill. Makes 6 servings. Rolled Cookies Rolled cookies are coming back into fashion! New cooks who attempt these should remember to chill the dough before rolling, and to roll out only one- quarter of the dough at a time. Stagger Dishes Just remember this rule whenj you are baking several dishes at one time: place the pans on the oven racks so there is ample chance for the hot air to circulate.
