Fall is the time wheti \ve check out palitry shelves and wonder If we have a large enough supply of jams and jellies. We like to have not only enough for our own use, but also some for favorite friends at Christmas time. One of the favorite jams or conserves, as we often call it, is ginger pear. The Original recipe called for ginger root which cannot always be found easily. In this case we can make use of preserved or candled ginger, either of which will add the desired flavor. Everyone likes pickled pears, and the small Seckle variety are especially well liked. These do not need to be pared before they are combined with a spicy syrup. If you like, the pears may be studded with cloves. If you see a basket of these pears in the market, do not overlook them since they need not be used immediately if they are kept in a cool place. If you find any Concord grapes in the market, you may like to make use of some of them in jam — both the pulp and the skins are used for this. The pulp should be cooked slowly until the seeds rise to the top. Then the mixture should be pressed through coarse sieve. Ginger Pear Preserve 4 pounds prepared fruit (about 8 cups) 6V£ cups sugar 2 ounces green ginger root 2 lemons Select hard green fruit. Wash, pare and core. Slice thin and place in large kettle. Add sugar and mix thoroughly with fruit. Let stand 8 to 10 houts. Scrape the cut ginger root in small pieces. Slice lemons thin, removing seeds, and add to pears With ginger root. Bring to boiling quickly over high heat, stirring frequently, until pears are transparent and syrup thickens. The time will depend upon the type of pears used. Pour at once into hot sterilized jars and seal. Yield: about three pints. Pepper Ucllsli 12 sweet red peppers 12 sweet green peppers 12 medium-sized onions 2 cups vinegar 2 cups sugar 3 tablespoons salt 1 tablespoon celery seed. Wash peppers and onions. Cut peppers in half, remove stem ends, seed and fibrous white portion. Peel onions. Chop peppers and onions fine or put through meat grinder, Using medium knife. Cover with boiling water, let stand 5 minutes and drain. Put vegetables In sausepan, add vinegar, sugar, salt and celery Seed. Bring mixture to boiling, stirring constantly until sugar is dissolved. Cook 5 minutes. Pour into hot sterilized jars and seal Immediately. Yield: about two pints. (0 1962, General Features Corp.) VANITY, VANITY , . .
