One of the most interest ing recipes in my own famllj collection is one for Cream Custards. It Is expensive and could onl; be made when eggs were un Usually cheap and when some use Was made of the yolks. We solved our problem by making Little Gold Cakes that fortun alely needed no whites. Then for a special bccasion we combined these with thin or what we call coffee cream and baked the famous Cream Custards. CREAM CUSTARDS 4 eg-g whites, slightly beaten V4 cup sugar M teaspoon salt 1 cup milk 1 cup heavy cream Nutmeg Combine slightly beaten egg whites, sugar, and salt. Add milk and cream, and stir until sugar is disolved. Pour in custard cups, sprinkle with nutmeg, and place cups in pan of hot water. Bake in moderate oven (375°) until set, about 25 minutes. The custard will be cooked when mixture does not adhere to knife when inserted. Cool quickly by placing cups in cold water. : 6 servings. LtMLE GOLO CAKES i& CUps sifted cake flour >1% teaspoons baking powder % teaspoon salt % cup shortening 1 cup sugar 8 egg yolks, well-beaten Vi cup milk 1 teaspoon vanilla extract Mix and sift flour, baking powder, and salt. Cream short-* enlng, add sugar Slowly, ahd cream until fluffy. Stir in well- beaten egg yolks. Add sifted dry ingredients alternately with milk, stirring well after each addition. Add vanilla extract. Bake in small greased muffin pans in moderate oven (350°) 25 to 30 minutes. Cool and frost, if desired, Yield: 2 dozen small cakes. 'Instant' Flour Hits Packaged Food Market By EDITH M. Canning and freezing are examples of notable accomplishments. Now comes an "instant" flour which does not pack, so that thej granules keep separate. This al- ows us to make lump-proof j gravies and sauces. A new verb 'Inslantized" has been added to our vocabulary. MEDIUM CKEAM SAUCE 1 cup cold milk 2 tablespoons instantized flour U teaspoon salt % teaspoon pepper 2 tablespoons butter Measure cold milk into medium- ized saucepan.
