This was a staple In early days. Now, however, It is a'luxury^produdt as the supply is'small'and localized. ^ Usually we->reserve our precious maple syrup,for Use with griddle cakes or waffles. There is, however, maple • flavored syrup under various brand names that is very popular and serves the purpose. Adirondack Griddle Cakes Use recipe for griddle cakes. Bake large cakes about 6 or 7 inches in diameter. Spread each with shaved maple sugar and whipped cream, piling one on top of the other. At the table cut in pie-shaped pieces fo serving. Yield: 6 Servingsr Maple Nut Sauce j, 1 cup maple syrup % cup thin cream % cup salted pecans or al monds Boil maple syrup 5 minutes Add cream, stirring constantly Stir in nut meats, whole or sliced. This type of coconut can be stirred into the batter of a cake or it is particularly good when sprinkled over frosting which has been spread over the cake. Coconut cake is still a good birthday choice. BIRTHDAY CAKE 2Va cups sifted cake flour 2 J /4 teaspoons double-acting baking powder '/z teaspoon salt % cup butter or marganine 1V6 cups granulated sugar 3 eggs, unbeaten % cup milk 1 teaspoon vanilla extract 1% cups flaker coconut Measure sifted flour, add baking powder and salt, and silt again. Cream shortening, add sugar gradually, and cream together until light and fluffy. Add eggs, one at a time, beatng well after each. Then add flour, alternately with milk, a small amount at a time, beating after each addition until smooth. Add vanilla and blend. Stir in coconut. Pour 'batter into two 9-inch layer pans, which have been lined on bottom with paper. Bake in moderate oven (350 degrees) for 35 to 40 mitt utes, or until cake springs back when pressed lightly. Frost with Makes 10 to 12 servings. SEVEN-MINUTE FROSTING 2 egg whites, unbeaten IVs cups granulated sugar Dash of salt 1-3 cup water 2 teaspoons light corn syrup 1 teaspoon vanilla extract Combine egg whites, sugar, salt, water, and corn syrup in top of double boiler. Beat about 1 minute, or until thoroughly mixed. Th,en place over boiling water and beat constantly with sturdy egg beateMor at high speed of electric beater) 7 minutes,-or until frosting will stand in stiff peaks. Remove from boiling water.
