A novel idea is to use them as a filling for a pie. As you can see by its "portrait" it has the color and somewhat the texture of a pumpkin pie. This would be an appropriate dessert for the Kaster dinner for which we usually like to make special pre parations. Gold Treasure IMe Filling 1 cup carrots, cooked and mashed (I 1 .2 Ibs.) % cup brown sugar 1 tablespoon honey *A teaspoon ginger 'A teaspoon cloves H teaspoon nutmeg % teaspoon cinnamon U teaspoon salt 3 eggs, beaten !Hi cups milk Cook carrots in boiling salted water until tender. Save '2 tablespoons of cooking liquid to blend or mash the carrots. Combine ingredients in the above order and pour into pie shell. Bake in 400' F. oven for 20 minutes. Complete baking at 350° F. for approximately 25-30 minutes. Garnish with whipping cream or ice cream. Crust 1 package of pie crust mix For a 9" pie, use one and a half sticks of prepared, pastry dough. Roll out dough and line pie pan. (© 1963. General Features Corp.)
