I tcxtav. »> .00 «e*iil. hlwtt i «» *«!..,r, EVERYBODY LOVES A BARBECUE by Betty Stern T he taste for barbecuing is inherited. It is the second oldest form of cookery (simple broiling was first). Our colonial ancestors turned barbecues into day-long shindigs with political overtones. Today, we have our famous Texas barbecues. For summer entertaining that takes you out of the kitchen try the Chicken that will not be dry, or Barbecue Spareribs. Meat is the center of attraction so make the rest of the meal simple. Spiced Iced Tea gives you a cool refresher. A Savory Sauce is the heart of a good barbecue. It clings to and penetrates the meat to give it a crisp golden brown appearance. Leftover sauce keeps well in the refrigerator. BROILED CHICKEN WITH LEMON BARBECUE SAUCE 2 broiler-fryer salt chickens halved, margarine quartered, or cut in serving pieces Wash, dry, and sprinkle chickens with salt and brush with melted margarine. Place chicken on the grill, skin side down and broil about 5 minutes on a side, or until nicely browned. While chicken is browning, form a pan from heavy duty aluminum foil. Turn edges of foil up about 1 inch all around and miter corners. Have this pan ready at one side of the grill. As chicken browns, transfer to the pan with tongs. When all the chicken is brown, slide the pan into position over the fire. Cook the chicken about 45 minutes longer, basting with the Lemon Barbecue Sauce or leave plain. NOTE: If chicken is larger than usual or not as tender as desired, a piece of foil may be placed over the top of the pan to hold in some of the steam while chicken is cooking. SPICED ICED TEA 6 tablespoons instant tea 1 quart boiling water 2 quarts cold water' 2 lemons, sliced 1 cup sugar 1 cup water 10 sticks cinnamon 1 tablespoon whole .cloves In a saucepan mix sugar and the 1 cup water; add cinnamon and cloves. Simmer over low heat for 10 minutes to make syrup. Strain to remove cinnamon and cloves. Pour boiling water over instant tea. Stir to dissolve; add cold water. Stir in syrup. Add ice. Float lemon slices on top. Serve ice cold. Makes approximately 14 tall glasses. BARBECUED SPARERIBS 4 pounds spareribs Salt, pepper Sprinkle spareribs with salt, pepper. Brown quickly over coals. Place each serving on a double-thick square of aluminum foil. Pour 2 tablespoons Barbecue Sauce over top of ribs. Bring two edges of foil together over ribs; make double fold at each end. Place packages on grill over medium coals; grill 45-50 minutes. Yield: 4 servings. BARBECUE SAUCE / large onion, sliced 2 tablespoons margarine 1 cup canned tomatoes 1 cup diced celery I cup ketchup 1 cup diced green pepper 2 tablespoons browr. 3 dashes Tabasco sauce '/2 teaspoon dry mustard I cup beef stock or 1 bouillon cube dissolved in I cup boiling water 1 teaspoon salt '/a teaspoon peppei 1 tablespoon choppei. onion sugar Brown onion in margarine in heavy sauce pan. Add remaining ingredients; cover; faring to boil. Simmer over low heat about 2'/2 hours or until sauce is thick. Yield: Approximately 2 cups sauce. LEMON BARBECUE SAUCE '/2 cup corn oil 'A teaspoon peppe- '/2 cup lemon juice '/i teaspoon papriKi- V* cup dark corn syrup 1 teaspoon sal' Combine all ingredients in a heavy sauct pan. Heat to boiling, then simmer for abou- '/a hour to blend flavors. Keep hot for bastiri.c Mix thoroughly before each basting. Extr. sauce may be served as a sauce or for dunkmr chips or pieces of raw celery.
