44 BURTON MAIL THURSDAY NOVEMBER 13 1997 JL jk Ak Jy by Qhef's NEWS PEWS Steve Sandner of the Riverside do prefer them very moist and spicy If the dessert is at all dry on goes the sauce by the boatful Christmas puddings are not hard to make but finding a recipe that suits your palette is hard to come by You could bake what you think is an excellent pud and then invite 10 people to taste it and you would be given 10 different hints on how to improve it Originally it was the Victorians who turned plum pudding into Christmas pudding They actually started out a bit before that and were initially savoury boiled puddings At Christmas people ate plum porridge which does not bear thinking about Also the puddings in Queen Anne times were solid and dry so the major cooks of that time started topping them with flavoured butters and alcoholic bastings and various sweet sauces One sauce which I think should be revived is a rum egg-nog sauce popular years ago but not many people will know what an egg-nog is today TO THOSE who have already made their puddings for Christmas this week's recipe will have come a bit late but it serves you right for being so organised However all is not lost you can still serve with your something slightly different by trying the sauce recipe given today I am not the biggest Christmas pud fan in the world but if I do have to be polite and eat a portion I basically creamed egg yolks and caster sugar mix To make the sauce cream three egg yolks and 80g3oz sugar add a teaspoon of arrowroot dissolved in sugar Heat until stabilised ie until the arrow-root has done its job Cool and fold into whipped cream flavoured with dark rum I know where the idea of adding coins to the pudding came from perhaps it was a novel way of handing out pocket money to the kids thus ensuring that they stayed long enough at the table and also eat the pudding I recommend adding coins to the pud these days as dentistry charges now rank with mortgage repayments and car HP repayments However if the house insurance premiums are fully paid up setting alight the pud will always produce a few oohs and aahs! The best way is to pour half the alcohol over the pudding heat the remainder and ignite it Pour the burning alcohol over the pudding this will set alight the alcohol already on the pud but of course if you have had a bad day and things have not gone to plan sit down with the Remy and serve the pudding plain! Someone has paid for all of my sins SO LOUISE is guilty but free one could say that this is true of me too Guilty of living for myself (which is the core of sin) God knows guilty I know guilty and so do those even reasonably close to me Of course I could claim mitigating circumstances my background upbringing culture education that made it inevitable that I would end up living fundamentally for me and me alone There are occasional forays into giving and selflessness but these appease my conscience rather than reflect a way of life You see Christians are not better than anyone else not goodie goodies at all in my book they have simply taken hold of the mercy of another judge There are though two stunning differences between my case and Firstly I intentionally sin there are conscious moments of selfishness and looking after number one These have led to people being hurt disappointed and sometimes damaged On a global scale they lead to people dying of starvation (there is enough food in the world but not the will to distribute it fairly) they lead to aggression murder and war Yet still this judge offers mercy Why? Because of the second difference Someone has paid for the results of my selfish sinful life Our mess isn't just overlooked or ignored it has all been paid for in full the sentence was carried out and declared not guilty I do love being a Christian Nick Pettingale Burton Community Church Come along to Songs of Praise ON SATURDAY at Burton Elim Church in Moor Street there will be a Songs of Praise night in aid of the Kids for Fraisethorpe 98 Fund This is the fifth year the church has held this event and all funds raised on the night will go to help pay for youngsters attending the summer youth camp at Fraisethorpe near Bridlington in Yorkshire Over the past few weeks members of the church have been nominating their favourite hymns and the top 10 will be sung on the evening In between each hymn various other groups and individuals will perform including the Salvation Army Band who are supporting the event again this year and the youngsters themselves Special guests for the evening will be Deputy Major and Majoress Mr and Mrs Tom Dawn The evening starts at 7pm and everyone is welcome A taste of Christmas The Riverside Hotel Branston Christmas pudding makes 12 portions 4oz flour 2oz breadcrumbs 1 tsp mixed spice 1 tsp cinnamon 1 tsp nutmeg 4oz suet 4oz brown sugar 4oz grated apple 1 small grated carrot grated rind and juice of half a lemon 1 tbs black treacle 4oz crystallised peel 2 eggs 4oz currants 8oz raisins 4oz sultanas 2oz chopped dried apricots 4oz chopped blanched apricots lA pint of ale Method Wash fruit and leave to dry for 48 hours Mix all ingredients together Leave overnight and stir once again hard for good Pour mixture into greased basin covering with foil Steam or boil for six to eight hours Remove wet covers as soon as pudding is cooked and re-steam for two to three hours on Christmas morning Christmas pudding makes 16 portions 6oz sultanas 6oz raisins 12oz currants 6oz mixed peel 6oz dark brown sugar 2 eggs V2 orange juice and zest V2 lemon juice and zest 5oz breadcrumbs 6oz flour 9oz suet pinch cinnamon mixed spice and salt 1 bottle pale ale 1 bottle Guinness 1 gill brandy 1 gill sherry 2 gills rum 2 gills orange curaco 1 gill madeira Method Wash fruit and leave to drain overnight Add mixed peel orange and lemon zest Mix and add all drinks Soak for seven days during each day Sieve flour spices and seasoning togetherand mix with breadcrumbs and suet Mix eggs and sugar into dry ingredients and once at a smooth paste fold gently into fruit mixture Steam for six hours before use steam for an hour and a half IF YOU cannot wait until Christmas Day for your taste of Christmas you could try our Christmas Fare on offer from November 24 The Riverside has always been the most popular place in Burton for people to go for their Christmas office or work parties We have menues as varied as the presents you receive assuring you that any taste can be catered for Party nights are very popular and with live music there is no need to book that taxi onto the night club thus saving your money and giving more time to enjoy a truly great Christmas night out I I I 8 I ON PRODUCTION OF THIS VOUCHER Offer valid Mondays to Fridays October 29th to November 18th 1997 Only one voucher per couple may be used per visit a Market Uleport be just delirious with this CD Get Delirious?
