On spur ef the moment I asked them for dinner last night I hod everything hut dessert planned and under way when it became necessary for me to go out for the rewt of the day. I had Intended baking a raspberry pie; when I rummaging through the cold closet for something I came upon a baked shell that must have been at least two weeks old, so, I thought Just fill this with fresh berries and they'll never know the difference.

I brought It to hy putting It into the oven for a few minutes, then cooled and filled It with raspberries. I had some fruit syrup left from canning apricot. This I colored red, added lemon Juice and thickened with corn starch. (Cook these sauces until very clear.) When It was cold It was poured over the fruit, the tart well chilled and each section with a email spoonful of unsweetened whipped cream.

From now on I intend baking and keeping on hand at least three such tart ahells for emergency use. They will keep freeh for a month if wrapped In waxed paper and stored In a box. Tiny ones can he In muffin tins and filled with creamed meat or anything desired. RECIPE Baked Liver with 2-pound piece ef liver 3 or more eliees bacon 8 email onions (boiling size) 12 small 1 cup tomato pulp 1 cup dioed celery 1 small green pepper, diced Parsley, salt and pepper 3 tablespoons bacon fat Flour to drodgo livsr Heat bacon fat in a skillet dredge the piece of beef liver In flour and quickly brown In hot fat. Transfer to a covered casse role and use root of the hot fat to saute small onion, peeled po which must be the site of large celery and green pepper, When they take on a little color arrange them around the liver, season quite highly, add one-half cup of hot water and drape bacon slices over the top of the liver Cover tightly end bake in a me dium hot oven until the vegetables are done and no tinge of red shows when a fork stuck into the liver.

Uncover and brown the liver little more before serving. This amount will serve from four to six people. The calories total about 2400, with a few energy ories tucked Into the total. Beef liver is rich in the vitamin which mode calves' liver famous and high priced, and long, slow baking allows It to take on the flavor of the vegetables. Salad and deesert oomplete the meal.
