B-8 Alton Evening Telegraph Wednesday, January 6,1971 fish chowder is easily made, very delicious By CECILY BROWNSTONE Associated Press Food Editor Cooks taste good dishes in restaurants and then come home and try to duplicate them. That's how this chowder came into being. A friend of ours, restaurant-hopping in Baltimore, tasted a main dish soup that had real staying power and then put it together in her own kitchen. She used a pantryshelf ingredient, cream of potato soup, as her base; but she admits that the original cook may have made the chowder from scratch. When we tried this Quick Fish Chowder in our test kitchen, we found it was definitely worthwhile. Serve the chowder with a Maryland favorite, com sticks. Add a fresh fruit salntl as dessert and you'll have lunch or supper made. QUICK FISH CHOWDER 2 tablespoons butter 14 cup finely chopped onion % cup thinly sliced celery 2 cans (each W/ 2 ounces) condensed cream of potato soup 1 soup can milk 1 soup can water 1 can (7% ounces) minced clams, undrained 1 can (7 ounces) tuna, drained and flaked 1 can (8 ounces) sliced baby tomatoes. undrained Pepper to taste In a medium saucepan over low heat melt the butter; add onion and celery; cook, stirring often, until lender. Stir in soup, milk, water, clams, tuna, tomatoes and pepper. Heat, stirring occasionally, to serving temperature; do not boil. Makes 6 generous servings. Baked In a mold and served with a zesty sauce made with an envelope of onion gravy mix and horseradish, it's another all-in-one-dish that's hearty and attractive. Either dish served with a salad, rolls and butler anf fruited gelatin for dessert is a satisfying meal that doesn't take a big bite out of the food dollar. PENNY WISE CASSEROLE 1 package (5c-oz.) scalloped potatoes i£ pound frankfurters, cut into bite-size pieces 1 can (1-lb.) cut green beans, drained % teaspoon Italian seasoning, if desired Prepare potatoes according to package directions, using a 2-quart casserole. Stir in frankfurters, be a n s , and seasoning. Bake at 400 degrees for 50 minutes. 4 servings. BEEFY RICE RING 1 pound ground beef 2^ cups cooked regular rice 1 package (10-oz.) frozen or canned peas, cooked 2 tablespoons chopped pimientos 1 teaspoon salt % teaspoon leaf thyme, if desired 1 envelope (1-oz.) onion gravy mix 1 teaspoon drained prepared horseradish Brown meat lightly in a skillet, stirring to crumble. Combine ground beef, rice, peas, pimientos, salt, and thyme. Pack firmly into a lightly greased 5^-cup ring mold or 1%-quart casserole. Bake at 850 degrees for 20 minutes. Unmold. Prepare onion gravy mix according to package directions, stirring in horseradish. Serve hot over the beef-rice mixture. 4 servings. Special "get acquainted" bonus Redeem at our stores...
