B-6 AJton Evening Telegraph Wednesday, January 6, 1971 Banana cake with orange flavored icing By CECILY BROWNSTONE Press F««d Editor DEAR CECILY: Wffl you kindly nse a recipe for a banana cake? I have one but there's something wrong somewhere, because the cake turns out tasting delicious but is too heavy. - CAKE COOK. DEAR CAKE COOK: The lightest banana cake we've ever tried is one that is also flavored with orange and is a chiffon cake. The recipe follows and I hope you'll like it. Just one caution: Use bananas that are fully ripe and sieve them so the banana puree that results will work into the batter evenly. — C.B. BANANA ORANGE CHIFFON CAKE 214 cups sifted cake flour 1% cups sugar 3 teaspoons baking powder 1 teaspoon salt % cop corn oil « large egp, separated 1 cup sieved ripe banana (2 large) 1 teaspoon grated orange rind 1-3 cup orange juice % teaspoon cream of tartar Orange Frosting, see recipe Into a medium mixing bowl sift together the flour, sugar, baking powder and salt. Make a well in the center; add corn oil, egg yolks, banana, orange rind and orange juice. With a wooden spoon beat until smooth. In a large mixing bowl beat egg whites and cream of tartar until whites hold stiff straight peaks when beater is slowly withdrawn. Gently fold in flour mixture, blending well. Pour into an ungreased angelfood cake pan — 10 by 4 inches. Bake in a preheated 325- degree oven until a cake tester inserted in center comes out clean and cake springs back when touched — 1 hour and 10 or 15 minutes. At once invert pan and let stand on legs; if pan does dot have legs invert over a funnel or bottle; cool completely. With a small metal spatula loosen edges and around tube; ease out of pan with fingers. Leave cake bottom side up (top will have cracks) and cover with Orange Frosting. Cake may be cut into 15 two-inch wedges. ORANGE FROSTING 2 tablespoons butter 1 tablespoon light corn syrup % teaspoon grated orange rind 1 cup sifted confectioners sugar 1 tablespoon orange juice In a small mixing bowl beat together the butter and corn syrup; stir in orange rind. Alternately beat in the sugar and orange juice. Makes ^ cup of enough frosting for top of Banana Orange Chiffon Cake. Double recipe for enough frosting to cover both top and sides. BROILED BREAKFAST KABOBS 1 pound smoked ham, cut in 1-inch cubes 1 Package (12 ounces) smoked sausage links 8 slices bacon 8 canned spiced crab apples 8 6-inch metal skewers Cut each sausage in half crosswise. Separate bacon slices and place on rack of broiler pan. Broil 3 to 4 inches from heat for 2 to 3 minutes and remove to absorbent paper. Alternately thread ham cubes and halves of smaked sausage links on each of the skewers, at the same time weaving a strip of bacon over, under and between the piece of meat. Place a crab apple on the tip of each skewer. Arrange kabobs on broiler pan so surface of meat is 3 to 4 inches from beat. Broil 3 minutes or until lightly browned.
