Hirtz said. "We like the way food Is prepared there home cooked and there's a real folksy atmosphere. It's sad to see the Lilac closing. It's got the best home-baked pies in the area." Robin Day, a secretary, echoed similar thoughts. is just an extra job.

There's a lot of humility at the Lilac. Mrs. Holland takes orders, cooks, bakes and serves customers. Although the Lilac's food Is tops, over the years the drive-in never built to be a restaurant deteriorated. "Our equipment Is getting older," Lally said, "the maintenance costs keep going up and the air conditioning isn't adequate.

And there's just too much competition. When we were first here by ourselves, business was good. But now there's a (fast food place on every corner. They buy in volume and they have lots of storage space, too." Neither Holland nor Lally said they'd consider remodeling. There's counter and booth service, and just about any morning or noon customers are ordering up at both. Although the menu is changed daily for variety, the rotation generally includes Lilac specials meatloaf, Swiss steak, beef tips and noodles, pepper steak, ham or bacon and eggs, and chili.

Home-baked pies are always on tap apple, berry, lemon meringue and banana and coconut creams. "Of course, we always have fish, macaroni and cheese and cole slaw for Fridays," said Lally, who then hurried over to check the water level in a roast she had going. Meanwhile, Lally's daughter, Sue Holland, stood over an old bul spotlessly clean grill near the serving area, preparing an order of ham, eggs and hash-browns. The man-sized ham steak sizzled. Holland, who is the wife of Councilman Richard Holland, began helping her mother with restaurant chores in 1969.

"Mom leased the property, but I bought it in 1977, when I also began to manage it," she said, But Mrs. Holland's a lot more than a manager. Everyone works at the Lilac Drive-in. Being manager DR.
