24, 2001) in St. Mary's Hospital. Woman makes taffy a tradition Recipe overheard on party line in '30s GOREVILLE (AP) is the fun part" said Mary Lou Craig, as she pulled a roll of her special Christmas taffy in her basement. Using a wooden hook made some 50 years ago from a tree branch, the Goreville woman stretched the brown sticky mass until it turned into white, delectable taffy. She explained that the pulling creates air volume, necessary for good candy.

Craig does most of the work herself in the intricate art of old-fashioned candy making. Her husband, Curtis, steps in to assist in pouring the hot concoction into two large buttered pans. These are carried to the garage for cooling the necessary 10 mhvTj utes, before the "fun part" begins. The Craigs distribute hundreds of pieces of the taffy each Christmas season to a growing list of friends. "To me, this is Christmas; the making and giving," Mary Lou said.

Cold weather is perfect for making successful taffy, and on a recent Saturday morning, Craig had stood for more than an hour, stirring, as the taffy mixture bubbled. "It takes at least an hour and 15 minutes," she said, for the mixture to cook, reducing to half its original volume. "I like to have everything ready before the cooking begins." The recipe Craig uses was inherited from a friend, Oral Burklow, who died in 1993, in her '90s. Burklow had made tfie taffy since some time in the 1930s when she overheard the recipe over a rural Johnson County telephone party line. It seems a young woman who worked in a candy factory was sharing the recipe with a friend.

Burklow also copied it down. Burklow's brother made her a long-handled paddle and the stretcher, using wood from trees on their farm. These tools, as well as her large cooking pot, were passed on to Craig, along with the recipe.
