CHEESE-BAKED EGGS < J ,MK, a P?Ti 2 eges< 2 table sP°°ns rich milk or cream, I tablespoon butter. 3 to 4 tablespoons shredded American Cheddar cheese natural or process, seasonings as desired Into well-buttered individual baking dishes or a large baking platter pour the inilk or cream. Carefully break in the eggs. Sprinkle with salt pepper and paprika, dot with butter and top with shredded cheese. (You may like to add a bit of Worcestershire sauce and a drop or two of Tobasco sauce to the milk or cream.) Note: H you want to make them extra hearty, first arrange in the bottom of each dish a layer of corned beef hash, a thin slice of cr some chopped ham or luncheon meat, leftover creamed chicken or chopped and seasoned cooked chicken livers. COTTAGE CHEESE PINWHEEL ROLLS 1 package of cake yeast (active or compressed) % cup warm not hot •water 2% cups sifted flour FILLING: 3 tablespoons melted butter % cup firmly packed brown sugar _ oven 20-25 minutes Y4 cup sugar 1 teaspoon salt % cup butter 1 12-oz. carton cream style cottage cheese 1 egg, beaten teaspoon vanilla teaspoon almond extract cup chopped nuts Measure water into mixing bowl. (Cool to lukewarm for compressed yeast Sprinkle or crumble in yeast. Star until dissolved. Sift flour, sugar, and salt together into a mixing bowl. Cut in butter until the mixture resembles fine meaL Add cottage cheese, egg, and dissolved yeast and mix well. (If necessary add more flour to make a dough that can be Handled.) Roll out on a lightly floured board to a 14 inch square. Combine all of the filling ingredients and spread on the dough. Roll up like a jelly roll and cut into 18 slices. Place on a greased baking sheet and let rise for 1% hours or until doubled in bulk. Bake in a 375° preheated oven for 20-25 minutes.
