May 7, 1975 Garden vegetables give this cook spring fever Recipe Roundup By Lolita Driver Pantagraph Food Editor With spring and early summer garden produce at our disposal, Mrs. Glen E. Burton of Pontiac thought our readers might like to try some of her vegetable and other specialties. Breaded Cauliflower: 1 head cauliflower.

3 or 4 eggs, beaten; 2 cups dry bread crumbs. 3 grated parmesan cheese, 1 tsp. garlic salt, 1 tsp. dry or fresh parsley leaves, 4 tsp. dry or fresh basil leaves.

sterilized jars. Process for 10 minutes in hot water bath. Spicy French Dressing: 1034-oz. can tomato soup, 34 cup each sugar and salad oil, 4 cup vinegar, 1 small onion, finely chopped; 1 small garlic clove, minced; 1 tsp. each Worc-stershire sauce and salt.

:,4 tsp. each pepper and paprika and tsp. dry mustard. Blend all ingredients thoroughly. This will keep for several weeks in the refrigerator.

This amount makes about 1 quart. Wash and separate cauliflower into buds. Cover with water to cover and bring to a boil. Cook just till tender (do not overcook or the buds will fall apart when deep-fried). Drain.

When cooled, slightly dip buds in beaten eggs, coat with mixture of the last 5 ingredients. Fry till golden brown (about 1 minute) in enough oil so pieces float. Don't crowd pieces in pan. Drain on paper towel and serve hot (they're even good when cold, she says). Schnitzel Beans: 4 slices bacon.

Burton. Melt-in-Your-Mouth Yeast Bread: Set a mixing bowl over a pan of hot (not boiling i water. Put in cup milk and one-third cup butter. When butter is melted and milk lukewarm, remove from heat, stir well, then sprinkle on 1 pkg. drv veast.

Let stand 5 minutes. Stir well. Put in 3 eggs, or for added richness, 1 egg and 2 egg yolks; '4 tsp. salt, and the" juice of halt a lemon. Blend well.

Add l1 1 cups all-purpose flour and beat with mixer till smooth about 3 minutes. Add more flour, l1-; to 2 cups, depending on size of eggs and lemon. Mix thoroughly Dough will be on the soft side, just firm enough to hold its shape, but not as stiff as bread dough. Alter flour is blended in. cover bowl with towel and let stand 3 hours.

Stir down, cover again and chill in the refrigerator for at least 3 hours or overnight. Butter a loaf pan or muffin tins and fill one-third full. Let rise till doubled in bulk. Bake at 375 degrees till golden brown and bread sounds hollow when you tap it. about 15 minutes for muffins.

30 minutes for a loaf. The lemon juice gives it the extra flavor. Combread Extraordinaire: 2 eggs. 4 cup salad oil. 1 cup each sour cream, creamstyle corn and cornmeal.

1 1 tsps. salt. 3 baking powder and 2 sugar. Beat eggs and sour cream. Add oil and com.

Blend in dry ingredients. Bake at 350 for 30 minutes. You can fix this ahead by mixing eggs. oil. cream and corn in one bowl and the 4 dry ingredients in another bowl and combining them when you are ready to bake.
