There are more varieties available every place now, frozen, fresh, or canned, and there are ever so many ways to prepare and serve this tender, nutritious food. Since fish is usually bland, it needs a zesty garnish, and one of the best taste additions is tjie citrus family. Now'that both canned and frozen Florida grapefruit sections are available here and so economical, team these two good buys and enjoy grapefruit in a new role. Just heated through, you'll find juicy frozen Florida grapefruit sections perk up the flavor of fish. And, lest the thought of a broiled fish dinner deter you, try the newest trick with aluminum foil* spread a sheet of it over your broiler rack, place fish on the foil, and when you've finished cooking, simply wrap up the foil and discard—no griasy mess to clean up! To prepare /is/i: Use fresh or frozen fillets or 1 'j-inch thick steaks or split medium fish. Place fish on aluminum foil on broiler pan. Brush with melted butter: sprinkle with paprika. Place in broiler 2 inches below medium heat. Broil until fish is easily flaked and moist, 10 to 12 minutes for fillets, 8 minutes on each side for steaks and five minutes on each side for split fish. Three minutes before fish is cooked, place grapefruit sections on top; continue broiling until fish is cooked. Prize Winning Recipes OATEN BREAD By Theresa Thilges, Algona 1 cup rolled oats 2 cup sificd flour 2'j teaspoon baking powder f 2 teaspoon soda 1' 4 teaspoon sail '2 cup sugar 1' 4 sour milk 2 tablespoon shortening 1 cup drained diced cooked prunes 1 2 cup chopped nuts Turn oven to 350 degrees F. Grease well a broad pan 9x5x3 in. Mix and sift together flour, baking powder, soda, salt, sugar and rolled oats. Cut prunes in half, d«ce remainder, chop nuts. Add melted shortening to sour milk. Stir milk and shortening into flour mixture just enough to moisten. Add prunes and nuts. Pour into greased bread pan. Place prunes and nuts (halves) on top. Place in oven and bake for about 50 minutes. PEANUT BUTTER BREAD (One Loaf) By Mrs Joseph Strobbe, Algona 1 2 cup peanut butter 2 cups flour 4 teaspoons baking powder 1 teaspoon salt 1/3 cup granulated sugar 1' 2 cups milk Cut peanut butter into sifted dry ingredients with pastry blender. Add milk and mix quickly. Place in well-greased bread pan and bake in 350 degree oven for 45 minutes.
