The recipe below specifies acorn squash, but zucchini or crookn<>c-k varieties may be substituted. The latter probably will take less baking time, depending on size and maturity. They should be baked only until just done, not soft or mushy. Flavor Hints when preparing squash as a vegetable: • : Use Ac'cent along with salt in the cooking water or at serving time. Mash squash with lemon juice, butter or margarine and a touch of cinnamon and sugar, for new flavor interest. (3 ounces) cream cheese 2 squares Baker's unsweetened 2 tablespoons milk chocolate, melted 2 cups sifted confectioner sugar Dash of salt Method: Soften cream cheese with milk. Add sugar, 1 cup at a time, blending after each addition. Add chocolate an dsall and beat until smooth. SNOWFLAKE FROSTING By Mrs Ben Reid, Algona 2 c. sugar • : 4 c. water 1 tsp. vanilla '4 tsp. cream of tartar 2 egg whiles 2 tbs. lemon juice 8 marshmallows, cut in pieces Mix together sugar, cream of tartar and water in sauce pan. Boil slowly wthout stirring, until mixture spins on a thread, when a little is dropped from spoon. Keep pan covered for the first 3 minutes to keep crystals from forming on sides of pan. Beat egg whites until stiff enough to hold a point. Pour hot syrup very slowly into stiffly beaten egg whites, heating constantly. When frosting begins lo thicken add marshmallows, lemon juice and flavoring. Beat until fluddy and will hold its shape. TWO W-I-N-N-E-R-S In Frostings and Icings!
